One of my favourite proteins to cook with are sausages! They’re totally versatile and absolutely delicious! Whether you’re adding sausage in soups, pastas, in a bun or for a breakfast sandwich, I guarantee sausages enhance the flavour of any dish!

What’s even more satisfying is when you use a homemade sausage to add to your meals. You’ll see from this recipe how easy it is to make your own sausage! Furthermore, this Pork & Bacon Breakfast Sausage is certainly going to be one of the most special sausages you’ve ever had! Why Should I Make My Own Pork & Bacon Sausage?

I guarantee you’ll love making your own sausage! Here are a few reasons why you should!

  • You get to decide what’s in it! Season your sausage to your desire, and experiment with different levels of spice and a variety of flavours! Not only can you throw in the ingredients you want, but you can also choose the fat content of your sausage depending if you get medium or lean pork.

  • Scalable: You can make as much sausage as you want! Furthermore, you can portion out the batch as you’d like. For instance, you can shape some of the sausage into breakfast patties, and some can be used to make sausage rolls or even stuffed in sausage lining to use over a grill.

  • No casing: You won’t have to deal with the messy casing! If you’re like me and you hate getting your hands dirty, this is a huge bonus!

  • No funky ingredients: A lot of store-bought sausage meats have other “unwanted” ingredients such as corn syrup and excess salt. These sausages contain pure minced pork and all natural ingredients with no chemicals or preservatives!

  • Freezer-friendly: These Pork & Bacon Sausages are perfect for meal prepping! They’re freezer friendly so you can just grab and go - no need to thaw overnight! They cook easily from frozen for those busy mornings!

  • Versatile: Use this sausage for breakfast, lunch, or dinner in sandwiches, wraps, pastas, stews and more! I’ll give you some of my favourite recipes that you can use this sausage in to give you some ideas!

Can I Replace the Pork with Chicken or Turkey?

Yes you certainly can! For this recipe, I’m using ground pork and bacon. If you do not eat red meat, you can still make this type of sausage by using either minced chicken or turkey and adding a turkey bacon to replace the regular bacon. However, keep in mind that poultry is drier than pork. [is there a way to make it juicy if using all poultry?]

Ingredients for Pork & Bacon Sausage

  • Ground pork: If desired, you could mix in or substitute other minced meats such as ground chicken, turkey, beef or lamb.

  • Bacon: Any kind of bacon will work. I’m using thick-cut bacon because it’s super delicious!

  • Onion: Finely chopped onion that will cook with the bacon.

  • Egg: I use a standard large egg here. You’ll want an egg to bind all your ingredients together.

  • Parsley: I recommend you use freshly chopped parsley for the best flavour.

  • Salt and pepper: Season to taste.

How to Make Pork & Bacon Breakfast Sausage

Preparing the Sausage

Finely dice the bacon and add to a cold pan. Turn the heat to medium and let the fat start to render. Cook the bacon until most of the fat has been rendered and the bacon has started to become crispy.

Add garlic and onions and stir well. Continue cooking until the onions have softened and the bacon has become crispy. Set the pan aside and let the mixture cool down.

In a large bowl, add the meat, egg, onion-bacon mixture, parsley, salt and pepper. Mix well until combined.

Sausage is ready to be prepared in your favourite way!

How to Cook the Pork Sausages

To cook your patty, heat a pan on medium heat. Add some olive oil or butter and add the sausage patty onto your pan. Cook for 1 1/2 - 2 minutes on each side until lightly browned on each side.

If you are ambitious, you can use sausage casing to make actual sausages and enjoy breakfast over the grill.

Tips for the best homemade Pork & Bacon Sausage

  • You can substitute the bacon with chorizo, ham and even Canadian bacon.

  • Always start cooking the bacon from a cold pan - this helps to render the bacon fat gently and get a better crisp on the bacon.

  • If freezing, form patties or your usual serving amount in separate weighed out freezer bags for ease and convenience later.

Variations For Pork Sausages

This is a simple pork and bacon sausage recipe. It’s meant to be easy to make with minimal ingredients so that it’s versatile to use in a number of ways. However, if you want to customize your sausage, then by all means go for it! Here are some ideas for you to mix and match! Comment below what you want to add!

  • Herbs: Experiment with other fresh herbs such as chives, dill, basil, rosemary or oregano.

  • Peppers: You can use fresh bell peppers, jalapeños, or even jarred peppers such as banana peppers, Calabrian peppers or chipotle peppers in Adobo.

  • Onion: I’m using red onion, but feel free to experiment with your favourite onion. You could also add leeks, fennel bulb, green onions or shallots.

  • Spices: Anything you’d like! Try garlic powder, onion powder, crushed red chili flakes, curry powder… See what you enjoy!

  • Grated cheese: Parmesan, cheddar, Havarti, or Monterey Jack would be excellent here!

Serving Suggestions for Pork Sausages

If you want to eat these sausages as a protein on their own, then that’s totally great! Here are some sid edishes that will go really well with your sausage for a satisfying meal!

Storing Pork & Bacon Sausage

Transfer extra cooked or raw Pork & Bacon Sausage into an airtight container or in a plastic bag and store in the refrigerator. These homemade pork sausages will last 3 to 4 days in the fridge. You can reheat cooked sausage in the microwave or in a pan over the stove. Cook the raw sausage over the stove as described.

How to Freeze Pork & Bacon Sausage

I love making sausages because it’s so easy to prep and freeze the patties! To freeze, place the patties over parchment paper, then cover and top the sausage with another layer of parchment paper to cover each side. You can cut them into squares to individually freeze each sausage. Add each patty to a freezer-safe bag. Pork & Bacon Sausage patties will stay good in the freezer for 3 months.

How to Cook Frozen Breakfast Sausage Patties

You don’t have to defrost your frozen patties because they are so thin - which makes these such a convenient protein option! Your sausage patties should defrost instantly. If they do not, I recommend that you cook them for an extra minute or two, however in my experience the cook time for frozen sausage patties is just a few minutes longer than making it fresh.
