A Twist to Avocado Toast!
You’re waking up and craving something savoury.
Raise your hand if you love a classic avocado toast! I know I do, but I’ve got a bias toward guacamole. Avocados sure are delicious and are full of health benefits, such as containing nearly 20 vitamins and minerals, and they contain heart healthy mono-unsaturated fats.
Avocados are all the rage and with great reason! Not only are they so healthy, but they’re extremely delicious! I also love the versatility of avocados! I never end up wasting them because you can use them in so many ways, from tacos to salads and to smoothies!
But whenever I’ve got avocados hanging around, my heart usually tells me to go make a batch of guacamole. In my opinion, guacamole compared to avocados on their own just has that kick that I love! You can check out my Incredible Easy Homemade Guacamole recipe for more details, but I add tomatoes, onions, and green chilies in mine. I just love the heat from the green chilies!

…And a Twist to Bagel & Cream Cheese
Now I also love bagels. In particular, my favourite kind of bagel is an herb and cheese bagel. I also love flavored cream cheese. The classic one is good, but if you couldn’t tell with my guacamole versus avocado argument, I just like the enhancement from the flavored cream cheeses. I’ve tried jalapeño cream cheese, garden vegetable cream cheese, and smoked salmon cream cheese. These are all great, but my favourite is by far the garden vegetable cream cheese! But I’ll let you in on a secret: The smoked salmon was definitely intimidating to try but I really ended up loving it! I totally recommend this flavor!
But back onto the inspiration behind this recipe. As much as I love bagels and cream cheese (as you may have seen on Instagram lately, I’ve been having two bagels a day sometimes lately!) I was just in the mood for something different with this bagel.
So, on this lazy morning, I really felt inspired to have the ultimate bagel combo! I was motivated to make a fresh batch of guacamole specifically for this, but of course if you’ve got some leftover guacamole or have some packaged guacamole you can feel free to use that! I also had bacon and was really feeling like adding some meat to this bagel, so that’s that. Finally, I heard that egg and avocado go really well together, because both are so nice and creamy. I certainly wanted to try that combo, but me being me, I had to make it extravagant! I wanted to give my hand at attempting a poached egg to go with the guacamole, and let me tell you that that was absolutely a great decision!
I didn’t have my favourite herb and cheese bagel here, so I think that’s what really motivated me to make a super savoury treat for breakfast. This was a simple sesame bagel because they ran out of herb and cheese bagels at the grocery store! But I’m sure this combination would have been even more epic with my favourite herb and cheese bagel!

Why Make This Bagel with Avocado and Egg?
This breakfast bagel recipe may sound quite elaborate, but I promise you it’s not so bad! Bagels are great, but if you really give them some love, you’ll truly enjoy breakfast and feel satisfied. Personally, I’m a firm believer in getting your day started right with a filling and nutritious breakfast.
This breakfast may be a bit much to make when you’re trying to run out the door, but I definitely recommend this savoury treat for a relaxing weekend morning! With the satiating effect from eggs and guacamole, this bagel combo will definitely keep you full till lunch! But if you do want to make a second one, I wouldn’t blame you! I know I could have totally had another!

The Method for This Easy Avocado Bagel
This recipe for a bacon, egg and guacamole bagel is quite straightforward! I would just recommend diligence when making the poached egg, as that certainly requires some finesse! Here’s what you need to do!

Get Your Guacamole Ready
Either prepare it from scratch or use ready-made guacamole. if you want my opinion, I’ll always choose homemade guacamole! But I understand that you may be in a pinch for time, so feel free to use whatever works best for you.

Cooking the Bacon Bits
Add the bacon strip directly on a cold pan and turn on the heat to medium-low. The bacon will slowly release its fat and cook evenly as the pan becomes heated.

Turn every 2-3 minutes until crispy (adjust to your preference). Lightly pat dry with paper towel.
Roughly chop into bacon bits.
Poach Your Eggs

Fill a saucepan with water and bring to a boil, then add the vinegar.
Crack an egg in a cup or glass before adding it to the water.

Bring the water down to a simmer and create a whirlpool by whisking the water.


Gently ease the egg into the water. Once the egg white has formed around egg yolk, you may add another egg.

Repeat with the remaining eggs. Don't overcrowd the saucepan, you can add up to 2 eggs in the same pot. Be sure to add it individually.
Cook for 3-4 minutes and use a slotted spoon to remove the egg from the water. Lightly pat dry with a paper towel.

Assemble Your Loaded Breakfast Bagel
Slice a bagel in half. Toast to your preference and add a generous amount of guacamole on both sides.


Place the poached egg on top of a bagel and add the bacon bits, along with hot sauce if desired. Serve immediately and enjoy!

How do you poach the eggs?▼
Bring a saucepan of water to a gentle simmer and add a splash of vinegar (about 1½ teaspoons). Stir to create a whirlpool, then ease a cracked egg into the centre so the white wraps around the yolk. Cook for 3 to 4 minutes and lift it out with a slotted spoon.
Why start the bacon in a cold pan?▼
Laying the strip in a cold pan and bringing it up to medium-low lets the fat render slowly, so the bacon cooks evenly and crisps up without scorching. Turn it every 2 to 3 minutes until it's as crispy as you like, then chop it into bits.
How many eggs can I poach at once?▼
Up to two in the same pot — just add them one at a time and wait for the white to set around the first before easing in the second, so they don't stick together or overcrowd the pan.
