The Whirlpool Method for Poached Eggs

They say if the concept is straightforward, you don’t need many words to explain it. So here it goes.

Using a whisk to create a whirlpool in the water, creates just enough centripetal force for the egg white to perfectly wrap around the egg yolk. You need that to ensure the egg yolk cooks evenly and part of it is not overcooked while the other part is undercooked. Think of the egg white as a wraparound layer of armor to protect the creamy yolk.

How to Poach Eggs

Fill a saucepan with water and bring to a boil. Once water has come to a simmer, add the vinegar.

Crack an egg in a cup or glass before adding it to the water.

Bring the water down to a simmer and create a whirlpool by whisking the water.

Gently ease the egg into the water. Once the egg white has formed around egg yolk, you may add another egg.

Egg being gently poured from a measuring cup into simmering water in a saucepan to poach.

Repeat with the remaining eggs. Don't overcrowd the saucepan, you can add up to 2 eggs in the same pot. Ensure to add it individually.

Cook for 3-4 minutes and use a slotted spoon to remove the egg from the water. Lightly pat dry with a paper towel.

How to know when the eggs are done?▼

Use a kitchen egg timer or just the regular stop watch to cook the egg for at least 3-4 minutes for the perfect creamy eggs. If the whirlpool was good enough, the eggs should be great every time.

Upon slicing the yolk, you should find a creamy, thick runny center. The yolk should not be thin and runny - this would mean the eggs are undercooked.

Tom make sure the above works every time, make sure the water is not at a rolling boil. You should see lots of steam and intermittent bubbles, right at the verge of a rolling boil but not quite.

Trial and error - don’t be afraid of it. If you can’t make the eggs poached, you can always turn them into scrambled eggs and pack it to enjoy later.

Do I Add Vinegar to Poached Eggs?▼

Vinegar is sort of the key to get consistency in your poached egg game. Vinegar, being acidic helps to rapidly break down the proteins in the egg white - in turn helping to cook the egg white faster. We want this, so it can quickly form a compact dome around the yolk.

This rapid cooking also prevents the eggs from turning into a watery scrambled eggs.

Do I Salt the Water?▼

Salting the water won’t do nothing more than seasoning the outside egg white part of the poached egg - not worth it for me. Personal preference, I’d much rather prefer seasoning with nice crystals of sea salt after its done cooking and fresh cracked pepper. Trust your taste buds.

Can I poach multiple eggs at once?▼

Really depends on how big, deep and wide your pan is. You need to be able to create a whirlpool and carefully add the egg into the water. If you are able to do this without damaging or merging with any egg(s) already cooking, then go ahead and poach multiple eggs

Tips on How to Poach the Perfect Egg

  • Prepare the egg by cracking it into a measuring cup or bowl and place nearby before creating the whirlpool.
  • Use a good quality whisk to create a strong whirlpool.
  • Use care to carefully drop the egg into the water - go as close as you can get to the water before dropping at the center of the whirlpool
  • Use a slotted spoon to remove the egg after 3-4 minutes - wrap in a clean paper towel to absorb excess moisture.
can I store These eggs?▼

You can technically undercook the eggs, remove them before 3-4 minutes of cooking time and set them aside for 2 to 3 days. To reheat place the egg in a bowl, add water and microwave until lightly warmed.

Serving Suggestions

There are plenty of ways to enjoy these eggs!

  • Alone, as a snack: Why not? Eggs are absolutely so healthy and really delicious! If you really wanted to prepare eggs in a speedy way if you’ve got the munchies, this is a great choice!
  • On a guacamole bagel: One of my favourite bagel combos is this Bacon, Egg and Guacamole Bagel! It’s perfect for a satisfying and nutritious breakfast! Check out the recipe to see how the poached egg shines!
  • Eggs Benny: I believe this is the iconic way to have poached eggs! To be fair I’ve never actually made this dish myself, but it’s been on the list for so long! Be sure to leave me a comment below if you want to see an Eggs Benny recipe!
  • On a salad: A poached egg would add excellent healthy fats and protein to your favourite salad! Perfect for a filling and well-balanced lunch!
  • Over crispy potatoes: For breakfast or brunch (or heck, even brinner - breakfast for dinner!), you could make a crispy potato hash and top it off with a poached egg. Yum!
  • On toast: Don’t knock the simplicity here! This combo is fast and easy and really lets you appreciate your amazing poached egg! All you need is the poached egg over some warm toast! You could butter your toast if you want!
  • Over rice: From what I’ve seen, Korean and Turkish rice recipes top their rice with a poached egg. I’ve never tried this, but these combinations totally look delicious! I certainly need to try!
