You can’t go wrong with a classic Quick & Easy Grilled Chicken Sandwich! Juicy grilled chicken with classic sandwich toppings, this sandwich is so easy to make, tastes great, and gives you a healthy lunch!

Grilled Chicken Sandwich

To me, a grilled chicken sandwich is a staple sandwich at lunchtime. You don’t need many ingredients to make this sandwich amazing! The star of the sandwich really is the tender grilled chicken! Pair this with lettuce, tomatoes, green onions, sour cream and a spicy aioli mayo and you’re set for success! Of course, don’t forget to use your favourite bread! Here I’ve made it an extra special occasion by using my homemade potato rosemary bread!

Why Make Grilled Chicken Sandwich?

What I love about a grilled chicken sandwich is also how quick it is to make! Grilling the chicken may seem like a lot of work, but it’s not! For this sandwich, you won’t believe how simply seasoning your chicken with salt and pepper will go a long way. Learn how I make The Best Grilled Chicken and you can use this for lunch!

Making the spicy aioli also takes about 1 minute. I’m not joking. Check out my Classic Spicy Aioli recipe which is the perfect condiment to go with your favourite sandwiches and burgers!

Finally, this recipe is not only delicious but it’s also very healthy! This sandwich is protein-packed with the grilled chicken, and we’re adding some tomatoes and lettuce for our veggies. It’s a great lunch to take to work or to enjoy to take on a picnic!

Ingredients for Quick & Easy Grilled Chicken Sandwich

Here’s what you’ll need to make this quick and easy grilled chicken sandwich:

  • Sliced bread: You can use your favourite bread, the possibilities are endless! I would recommend a nice big slice to rye or sourdough bread. They are some of my favourites.

  • Chicken breast: Use boneless, skinless chicken breast.

  • Tomatoes: Refreshing and adds colour to the sandwich.

  • Spicy Aioli: Made with mayonnaise, Sriracha sauce, lemon juice, minced garlic, salt and pepper.

  • Lettuce: Adds a nice crunch to the sandwich.

  • Sour cream: Refreshing and cool to complement the spicy aioli.

  • Green onions: Some extra green and a great garnish for the sandwich!

Can You Use Chicken Thighs?

Chicken thighs are my favourite cut of chicken and I think if you are looking for a more indulgent sandwich, thighs can work great in this sandwich. The dark meat is much more flavourful than the chicken breast so you can expect a much juicier sandwich.

To prepare it, follow the same instructions and season simple with salt and pepper and grill for 3-4 minutes on each side until lightly charred. If you’re feeling adventurous, you can add olive oil, lemon juice and a touch of Dijon mustard and Worcestershire sauce and marinate for 10-15 minutes.

How to Make Grilled Chicken Sandwich

  1. If using a large chicken breast (>150 g) cut the chicken into two, equal sized portions. The best way is by cutting it diagonally in two equal halves. Then place the portions in a Ziploc bag or between two sheets of plastic wrap and pound thin using a meat tenderizer (about 1/4 inch thickness).

  2. If you don’t have a meat tenderizer, don’t worry because I don’t either. I simply use rolling pin or a heavy pan to pound the chicken to about 1/4 inch thickness.

  3. Heat a grill pan on medium heat until hot. Check if the pan is hot enough by sprinkling some water on the pan. If the droplets dance around before evaporating, the pan is ready.

  4. Season the chicken with salt and pepper and drizzle a bit of olive oil on both sides. Place the chicken on the grill pan and cook for 3-4 minutes.

  5. Then, flip the chicken, turn the heat down to low and cook for 1-2 minutes. Let the chicken rest for 2-4 minutes before slicing or serving.

To prepare the sandwich

Prepare your Classic Spicy Aioli, or use a store bought spicy aioli.

Get your slices of bread on a work surface.

Spread the spicy mayo on both slices of bread.

Add the lettuce and pieces of grilled chicken.

Then add the slices of tomatoes.

Top with chopped green onions.

Add a dollop of sour cream.

Place the other slice of bread on top of the other. Cut your sandwich in half and enjoy!

Tips & Tricks for a Great Grilled Chicken Sandwich

  • It’s absolutely crucial to have a deliciously juicy chicken in a great grilled chicken sandwich. Follow my tips outlined in my Simple Grilled Chicken recipe and cook the chicken until charred, but still very juicy inside.

  • Wash your lettuce to remove any grit and then dry it to get a satisfying crisp lettuce in the sandwich. Pair it with a sweet, generous slice of tomato

  • This sandwich tastes delicious once chilled, at least I am a big fan. If you like chilled sandwiches as well, I would almost recommend making this ahead of time.

To assemble the sandwich
  1. Apply the spicy aioli on one side of each slice of bread. 
  2. Then add the lettuce, followed by sliced grilled chicken and tomato slices. 
  3. Top with chopped green onions and sour cream. Close the sandwich with the other slice and press lightly. At this point you may place the sandwich in the grill or chill if making ahead for meal prep.
  4. To serve, slice the sandwich at a diagonal and serve.
