This bacon and cheese grilled sandwich was the result of my quest to make the perfect grilled cheese sandwich - American style! If you see my Mom’s Grilled Cheese recipe, this is the grilled cheese sandwich that I grew up on. I had never tasted the classic cheddar cheese in India that’s synonymous with a classic grilled cheese. The reason being is that it’s extremely expensive and honestly, the lack of demand and local production are major factors! Additionally, since I was raised in a vegetarian household, adding some body to the sandwich with some meaty toppings was out of the question!
My first taste of bacon was when I arrived in Canada. This experience was in the form of a Subway sandwich. Now don’t ask me what exact sandwich I had because unfortunately I don’t remember! It was a really long time ago! But on TV I always salivated over some crispy bacon. It sure was heavenly and a tick off the bucket list to finally eat it! Then, I was so eager to cook it that I first made it in my university’s residence. Yum yum! Who doesn’t love that smell of bacon cooking?

- Evenly butter the bread to get a rich, golden brown crust. The best part about a grilled cheese other than the cheese is that crunch into the sandwich. No this does not mean you need too much butter, whatever amount you use, spread it evenly across the surface.
- Cook the bacon and cheese grilled sandwich on medium-low heat to allow the cheese to completely melt while the crust becomes crispy. Cooking the sandwich on too high a heat will cause the outside to be ready, while the inside is still solid.
- Use a spatula or a burger press to apply light pressure over the sandwich. This will help cook the sandwich evenly, while speeding up the melting process of the cheese.
How to Make Delicious Bacon Every Time?
Bacon contains a lot of fat and a mistake that most of us, including me am guilty of is placing a cold bacon strip on a hot pan. Due to its high fat contact, a hot pan will cause the bacon to start cooking instantly, causing some pockets on the bacon to burn while causing other pockets to hold on to its fat. This will result in an unpleasant, non-crispy, burnt-ish bacon, which does not sound appealing to me.
The goal is to cook the bacon evenly to ensure maximum crispness. This can be achieved by starting with a cold pan and cooking the bacon low and slow. As the pan comes up to a heat, the bacon also gradually starts releasing its fats. The process is much more controlled and not stressful at all.
As the bacon will start to cook, you will notice that the bacon will start to buckle up. At this point, turn the bacon and start cooking on the other side. Keep turning from time to time to give an even color and crispness.
You will visually notice a difference once the bacon is done, perfectly golden brown like your favourite breakfast place, while being crispy and tender without any of the burnt flavors.

How to Make Grilled Cheese Sandwich with Bacon
You’re only a couple of steps away from making a great bacon and cheese grilled sandwich! Here is what you need to do to guarantee an ultra yummy grilled cheese sandwich for lunch!
Begin by cooking the bacon. To do so, place the bacon strips on a cold pan and turn the heat to medium. Turn the bacon occasionally until evenly browned and done to your liking.
This trick helps to get the bacon up to temperature gradually. This allows the fat from the bacon to render easier, which results in a crispier, evenly cooked bacon which cooks faster.


Then, set aside on a paper towel to absorb the extra grease.
Brush butter on one side of each slice of bread.

Flip the breads over on the other sides. Add hot sauce on both slices of bread. On one slice, add the cheddar and provolone cheeses. Add the cooked bacon slices on top of the cheeses.

Then close your sandwich.

Now it’s time to finish making the grilled cheese. Place your sandwich on a non-stick pan on medium heat.

Cook on one side until the bread is a light golden brown and toasted. Press down using a spatula, to help evenly cook toast the bread.

Then, flip your sandwich, and cook the other side until the bread is golden brown and the cheese begins to melt.

Then cut your sandwich into triangular slices.

Hot sauce spread on the inside of the bread — about a tablespoon per slice. It tucks the heat right against the melty cheese and bacon. Use more or less to dial the spice up or down to your taste.

Laying the bacon in a cold pan and bringing it up to medium heat lets the fat render slowly so it crisps evenly without burning. Turn it every 2 to 3 minutes until it's cooked the way you like it.
