Yummy Chocolate Chip Cookie Pancakes
I think chocolate chip cookies are near and dear to everyone's heart. Back in India, my favourite chocolate chip cookie was the Cadbury Milano cookies. The commercial was very well done!! We all know that the ultimate pairing is with a nice cold glass of milk to dip our cookies in! Let's celebrate our love for chocolate chip cookies by making huge cookies in the form of pancakes! Here I've got some classic chocolate chip pancakes but with a bonus...

They're quite literally pancakes that are chocolate chip cookies because I added chocolate chip cookies in the pancakes! Oh my gosh, adding the cookies into the batter is absolutely terrific! Mind blown! The extra chocolate chips and texture of the cookies make the pancakes that much fluffier, softer, and extremely delicious! Chocolate Chip Cookie Pancakes Ingredients

Pancakes:
Creamy Milk Dip:
- Cream cheese
- Granulated sugar
- Milk

How to Make Chocolate Chip Cookie Pancakes
To Make the Creamy Milk Dip
Combine the sugar, milk, and cream cheese in a medium bowl by using a whisk or a handheld mixer. Set aside.




To make the pancakes: Preheat the oven to 200 F, this step is optional to keep the pancakes warm. In a large mixing bowl, add the flour and baking powder.



In a separate bowl, mix together the wet ingredients - milk, egg, honey, vanilla extract and the melted butter.




Add the wet ingredients to the dry and begin whisking using either a whisk or a stand mixer, until you get a thick but runny pancake batter.



Crush the chocolate chip cookies in a ziplock bag or mash them in a bowl, and add the crushed cookies and chocolate chips into the batter, then gently fold the cookie pieces and chocolate chips into the batter.






Heat a non-stick skillet or griddle on medium heat. Using a 1/3 cup measuring cup or a ladle, pour the batter onto the center of the hot pan. Flip the pancake when you start to see bubbles forming, which will take about 2-3 minutes. Then, cook for another minute or so. After each pancake has finished cooking, add it onto a baking tray and put it in the oven so it stays warm as the other pancakes cook. Turn the heat back up to medium and continue cooking the rest of the pancakes.



Assemble the pancakes: Lay all the pancakes on a plate and top with some extra chocolate chip cookies.

Dip the cookies and pancake in your creamy milk mixture as you would dunk chocolate chip cookies!

Serve hot and enjoy :)

Tips for the Tastiest Chocolate Chip Cookie Pancakes
- Whisk the dry and wet ingredients separately before combining the two together. This helps ensure that the ingredients are evenly distributed while cooking the pancakes.
- When adding the crushed chocolate chip cookies and chocolate chips into the batter, make sure to gently fold them and do not vigorously mix. If you do this, you’ll crush the cookies and chocolate chips, and their shape and texture won’t be maintained.
- While it may seem counter-intuitive, you actually want some lumps in the pancake batter. These add texture and tastiness. There’s no need to over-mix the batter for the pancakes.
- Be sure your pan is not too hot. You can easily test how hot your pan is by adding butter to the pan - it should remain white. If it turns brown and nutty instantly, take the pan off the heat for a minute or so.
- To avoid breaking the pancakes, make sure one side completely cooks before flipping. When there are small bubbles on the surface of the pancake, then this is the perfect time to flip.
