I had made a first impressions review video on my YouTube channel where I tested out a simple recipe and the different cook settings. Don’t worry, I most definitely have been making waffles since then, and I thought it was finally time to share a waffle recipe on the blog to check that off of my bucket list! I got the idea of putting together the sugar cookie flavours in waffles similar to where I made giant chocolate chip pancakes by adding chocolate chips AND actual chocolate chip cookies in my Chocolate Chip Cookie Pancakes with Creamy Milk Dip recipe! What is the Secret to Great Waffles?▼

Here are 3 pillars to great waffles:

  • Crispness: Amazing golden brown crispy exterior. A hot, preheated waffle iron is essential to get the right level of doneness. Some cornstarch can also help increase crispness.
  • Fluffiness: The inside of the waffles should be soft and fluffy to compliment the crispy exterior. Buttermilk instead of milk can further enhance the fluffiness of waffles.
  • Flavour: Most important of them all, to marry the crispy and fluffy texture is flavour. Use high quality ingredients and don’t forget the salt to round out the flavours.
Are These Festive Waffles Belgian waffles?▼

These waffles are definitely Belgian-style waffles, thanks to the Ninja waffle maker that helps create thick waffles with deep pockets - this is a staple trait of proper Belgian waffles. However, this recipe is not a traditional Belgian waffle recipe due to the sugar cookie elements in the batter and because this waffle batter is not made with yeast. Although similar to this recipe modern Belgian waffle recipes sometimes use baking powder. Furthermore, classic Belgian waffle recipes tend to use whipped egg-whites for increased fluffiness.

Is Pancake Mix the Same as waffle Mix?▼

You will notice that waffles and pancakes are very similar in that their batters have the same set of ingredients! However, the difference is that waffles will have more butter and sugar added in the batter compared to pancakes. This is because we need the extra fats and sugar to get the waffles to become crispy outside while not drying out. Furthermore, waffles are thicker, so we require the extra “oomph” from extra butter and sugar! On the other hand, with pancakes, they are on the thinner side, and the goal with pancakes is to get them fluffy and airy, whereas waffles are dense.

Should I Use Butter or Oil for Waffles?▼

I always would pick butter over oil to make waffles! In my opinion, butter is just more flavourful and richer that works perfectly with a treat that are waffles. Butter will also help scent the waffles with its delicious aroma, and to me that just screams great breakfast is waiting!

How thick should the batter be?▼

If you are used to making pancakes, the waffle batter should resemble it almost 1 to 1. It should be super thick to be able to momentarily hold its shape yet be pourable. It should also flow slowly when poured. In case the batter is too thick, add a splash or two of milk to adjust the consistency.

Can I Make These Waffles Gluten-Free?▼

Yes, you can easily make these gluten-free! When making this recipe, replace the flour with 1 to 1 Gluten Free Baking Flour to ensure you don’t have to tinker with any other recipe ingredients. I have worked with gluten free flavour to replace all purpose flour on a number of occasions, such as in my Gluten-Free Fudgy Brownies or Gluten-Free S’mores Pancakes and the difference in desserts is rather hard to notice.

Do I need to Grease the Waffle Maker Before Cooking the Waffles?▼

No, not only did my waffle maker specifically instruct not to use any to protect its non stick coating, the recipe is designed in a way that it shouldn’t be required. There is plenty of grease from the butter within the batter that will help brown and crisp the waffles while ensuring it does not stick.

However, in case there is something about your waffle maker that is niche, that requires addition spraying of grease, then please go ahead!

What If I don’t Have a Piping bag?▼

You can easily just serve the glaze on the side as a dip or use a spoon or fork to dip into the glaze and drizzle over the waffles. Alternatively, you can transfer the glaze to a squeeze bottle to top the waffles instead.

Can You Make Waffles in Advance?▼

Preparing these waffles in advance can be super convenient to have on hand. Once you have prepare the waffles, just make sure to cool them down on a baking wire rack. Once cooled, store in an air-tight container or Ziploc bag for 3-4 days.

The most crucial part of the waffle experience though is how to reheat them. The quickest way would be to pop them in the toaster until crispy and warm. You could also reheat in a 350 F oven for 8-10 minutes or pop it back in the waffle maker to refresh the prepared waffles.

If making in advance for storage, don’t garnish with the glaze or toppings. Always top with the garnishes just before serving.

Can I Make These Waffles in a Mini Waffle Maker?▼

Waffle makers are all kind of the same so go for it. It may even add to the cookie inspired theme by preparing giant cookie shaped waffles!

Do I Have These Waffles for Breakfast or For Dessert?▼

You can have these waffles either for breakfast or for dessert! One of my favourite mottos is that there’s no “appropriate” time to have the food that you want to eat! For instance, I don’t believe in “breakfast food” or “dinner food.” I recorded this recipe at dinner time! If you want a sweet start to the day for Valentine’s Day or just a Sunday brunch, then go for it! If you think “cookies” and your mind goes to dessert, then try these out for dessert! If you want breakfast for dinner, then feel free to prepare these for dinner! As long as you’re making them when you want to have them, then that’s all that matters!

  • Measuring cup

Ingredients

For the Waffles

  • All-purpose flour: Needed to make our base! I do recommend white all-purpose flour for best results.
  • Milk: I recommend full fat milk to get the fluffiest waffles, plus the fat in full fat milk will help get you golden brown waffles.
  • Egg: One egg to bind all the ingredients together.
  • Baking powder: This helps the waffles rise and become airy.
  • Almond extract: A key flavoring for sugar cookie!
  • Vanilla extract: Adds incredible aroma and always a must-have when preparing desserts!
  • Butter: Melt your butter and add it into your waffle batter.
  • White granulated sugar: For sweetness in our waffle batter and to make it feel like a sugar cookie!
  • Salt: Salt enhances all of the sugar cookie flavours in the waffle batter.
  • Sprinkles: For topping! It won’t be a sugar cookie without fun colours!

For the Sugar Cookie Glaze

  • Cream cheese
  • Almond extract
  • Vanilla extract
  • Milk
  • Butter
  • Powdered sugar

How to Make Easy Sugar Cookie Flavoured Waffles

Prepare the glaze by adding the softened butter and cream cheese in a bowl. Use a whisk or hand mixer with the whisk attachment to whip the ingredients together until light and airy.

Add the powdered sugar and mix well to combine.

Then, add a splash of milk to adjust the consistency, vanilla extract and almond extract.

Whisk to combine.

Transfer the glaze to a piping bag. Refrigerate until ready to use.

Add the dried ingredients in a large bowl, flour, baking powder, salt and cinnamon and mix well.

In a separate bowl, add the wet ingredients, milk, sugar, egg, melted butter. Mix well.

Add the wet ingredients to the dried ingredients and then use a spatula to fold the ingredients to create a thick batter. Be careful not to over-mix, mix until you don't see any clumps of dried flour.

Preheat the waffle maker at the setting of your choice, I always prefer the hottest setting. Pour 3/4 Cups of the batter to the waffle maker (adjust the amount as required for your machine) and cook until the waffles are ready.

Transfer the waffles to a plate, cut a small slit at the end of the piping bag and drizzle the glaze over the waffles. Add a pinch of cinnamon to garnish and add sprinkles over the waffles.

Tips for Crispy and Fluffy Waffles

  • Whisk the dry and wet ingredients separately before combining the wet ingredients with the dry. This helps ensure that the ingredients are evenly distributed while cooking the waffles.
  • While it may seem counter-intuitive, you actually want some lumps in the waffle batter as it adds to the final texture of the waffles. There’s no need to over-mix the batter for the waffles.
  • You can substitute the milk with buttermilk which can help make the waffles extra fluffy. The buttermilk is acidic and can act as a leavening agent in the batter.
  • For getting even closer to a cookie inspired flavour in the waffles, add a combination of granulated and brown sugar.
  • To keep the waffles hot crispy before serving a crowd, place the cooked waffles on a baking rack in an oven heated to 200 F.
