If you’ve been following my pancake recipes you’ll see that I’ve got quite a few pancakes with Oreos. What can I say, cookies n' cream is so tasty! But I have to say I actually prefer the cookie part of Oreos instead of the actual cream. Oreo Cheesecake in a Pancake!
These Oreo cheesecake pancakes came to be as I’ve wanted to make a full-blown Oreo cheesecake pancake recipe for a while now. I tested this Oreo pancake recipe a week prior but felt that the pancakes weren't sweet enough and needed some extra fluffiness and brightness since I wanted a chocolate cheesecake, since as you know I'm a major chocoholic! Instead of using honey as I usually do in the pancake batter, I went ahead with maple syrup. This was actually by accident since I ran out of honey, but I was considering adding more than I typically do. Maple syrup made these pancakes the perfect amount of sweetness so you get that cheesecake feeling! The idea behind this Oreo pancakes recipe was essentially to make the pancakes look like giant Oreos. I think I did a good job replicating that!
A Magic Ingredient in the Batter…
What makes these Oreo cheesecake pancakes super fluffy you may be wondering? The cream cheese! Normally I would make a cream cheese glaze but here we're going to add the cream cheese into the batter. Trust me, these Oreo chocolate pancakes will look like giant cookies and you're going to love every bite! They smell absolutely incredible and the taste is out of this world! The marshmallow fluff really brings this stack together with its sweetness and as a terrific glue to hold these pancakes in place! Enjoy this epic breakfast any time!
Making Chocolate Oreo Cheesecake Pancakes
- Always begin by preheating your oven to 200 F. We do this to keep our cooked pancakes warm while the others cook!
- Make your batter by mixing oat flour, maple syrup, cocoa powder, and baking powder together in a large bowl. Then add all of the wet ingredients, including water or milk, cream cheese, vanilla extract, egg and maple syrup in a separate bowl. Combine the wet ingredients with the dry and whisk either by hand or by using a stand mixer. Keep mixing until your batter has a thick yet runny texture.
- In a ziplock bag, add 4 Oreo cookies and mash them, or break the cookies by blending them in a blender.
- Heat a pan on medium heat and add butter. Using a 1/4 cup measuring cup, scoop some batter and start cooking your pancakes. Sprinkle some of the ground cookies onto the pancake. When bubbles begin forming, flip the pancakes and cook on the other side for about another minute. After the pancake has finished cooking, transfer it onto a baking tray and put it in the oven. Reserve some cookie crumbs for the topping.
- To assemble the Oreo stuffed pancakes, you’ll add 2 tbsp of marshmallow fluff onto each pancake. When you’ve reached the top pancake, coat it with marshmallow fluff, cookie crumbs, whole cookies, and chocolate syrup. Serve hot and enjoy these giant cookies!
