Have you ever had leftover pizza from the night before and enjoyed some for breakfast? I honestly do this pretty much every single time I have extra pizza, not going to lie! Whether it’s homemade pizza that’s leftover, such as my Paneer Tikka Pizza or from takeout, I really love to have pizza for breakfast!

Melted cheese stretching from a vegetable-topped pizza bagel held above a wooden board with more bagels.

What if you could enjoy your pizza for breakfast actually freshly made? Well, this Healthy Pizza Bagels recipe will give you just that! If you’ve made the sauce the night before (which is actually my favorite No-Cook Italian Pizza Sauce that you can make in 5 minutes!), you can assemble and bake these pizza bagels in just about 15 minutes for an excellent start to the day! Pepperoni Pizza Bagels are my favourite, but I wanted to provide a vegetarian option to all the vegetarians out there, or if you just don’t want to have pepperoni!

If you want to switch up your breakfasts to make them memorable and satisfying, then you need to prepare this healthy pizza bagel recipe as part of your Live to Cook one-month challenge! Why Make Healthy Pizza Bagels?

  • Pizza in little bites: If you want the taste of pizza but don’t want an entire pizza, then that’s where pizza bagels come in to satisfy the craving! From a self-proclaimed pizza lover, I guarantee you that these really do the trick!
  • Healthy: Hear me out! This Healthy Pizza Bagel recipe is an excellent opportunity for you to incorporate veggies in your diet in a delicious way. Furthermore, in appropriate amounts, mozzarella is a great source of protein and calcium. Also, you can easily use your favourite multigrain bagel, an assortment of vegetables and you have yourself a complete meal.
  • Exciting breakfast: Your favourite pizzeria probably isn’t open in the morning, but if you want to start your day on the right foot, then you can make this quick Healthy Pizza Bagel recipe in under 10 minutes if you’ve already made your sauce the night before! I’m certain that pizza bagels will become your new favourite hot breakfast!

What Type of Bagel Should I use For Pizza Bagels?▼

I love bagels when they’re warm enough to become soft and fluffy, yet still lightly toasted. To enjoy vegetable pizza bagels this way, with a molten, bubbly cheese, I prefer to place them under the oven broiler.

Bagels and toppings arranged on a wooden board with hummus, diced tomatoes, red onion, lettuce, and a red sauce with herbs.

As for what type of bagel to use, you can use any one of your favourite bagels, except those that are sweet, such as cinnamon raisin bagels or blueberry bagels! The previously mentioned bagels most probably would not pair well with tomato sauce and vegetables. My preferences are either herb and cheese or everything bagels to make pizza bagels. However, you can’t go wrong with simple plain bagels, and that’s what I’ve used here! Other types of bagels that would be the perfect base for Vegetable Pizza Bagels include:

  • All dressed
  • Garlic herb
  • Sesame seed
  • Poppy seed
  • Jalapeno and cheddar

With that being said, if you already have savoury bagels on hand, then there’s no need to go out to the store and get more! As I mention in my free motivational guide to explore your potential in the kitchen, Make Cooking Fun!!, using a suitable ingredient that’s already in your home is totally fine! You can switch up your bagel choice to have variety and enjoy pizza bagels a new way every time, but if you have some bagels that are waiting to be eaten, then as long as they are not sweet, you’ll be good to go!

What Cheese Should I use for Healthy Pizza Bagels?▼

I like to use a combination of two cheeses when making pizza bagels. I certainly recommend that no matter what, you make your vegetarian pizza bagels with mozzarella cheese. This is because mozzarella cheese is creamy and gives you the cheese pulls everyone loves when it comes to pizza! However, the problem with mozzarella is that there is not much flavour, which is where a secondary cheese comes in. My preferred choice is provolone because I use half a slice to cover the hole in the bagel so that our toppings don’t sink in the hole when broiling! I also like the creaminess and richness of provolone as it complements the mozzarella well. With that being said, there are lots of options you can use to mix and match with mozzarella. You can even add a third cheese, if desired! Here are cheeses that would be perfect to make your pizza bagels your own:

  • Swiss
  • Monterey Jack
  • Parmesan
  • Pecorino Romano
  • Cheddar
  • Gruyere
Sliced mild cheddar cheese and a block of gruyere on a white plate.

Tools Needed to Make Healthy Vegetarian Pizza Bagels

  • Baking sheet
  • Cutting board
  • Measuring spoons
  • Mixing bowl
  • Cheese grater
  • Fish spatula
  • Wire rack
  • Aluminum foil

Let’s review what we’ll need to make our Healthy Pizza Bagels! Be sure to scroll to the bottom of this post for the FULL PRINTABLE recipe card or press the “Jump to Recipe” button to see all ingredients and their quantities and to save the recipe for later. You can also scale the recipe based on how many pizza bagels you want to make. By default, the ingredients make enough for 2 pizza bagels.

Ingredients for vegetarian pizza bagels arranged on wooden board: bagels, tomato sauce, fresh basil, sliced red onion, green peppers, and condiments.

For the Tomato Sauce

Homemade tomato sauce with garlic, olive oil, and dried herbs in a glass bowl on a wooden board with fresh basil and sliced onions nearby.
  • Passata
  • Olive oil
  • Oregano
  • Garlic cloves
  • Chili flakes
  • Salt

For the Vegetarian Pizza Bagels

  • Bagels: Use your favourite kind of bagel, but my recommendations would be plain, cheese, or everything.
  • Cheese: Mozzarella is a must here because it is so creamy and contributes to the cheese pulls! The second cheese that pairs perfectly with mozzarella is provolone. It is also creamy, but it’s got a little more flavor than mozzarella, so I do recommend adding a second cheese with mozzarella.
  • Veggies: I’m using sliced onions and poblano pepper sliced into rings.
  • Cherry tomatoes: Cut into quarters.
  • Basil leaves: Torn and added for garnish.

Tips for Cheesy Vegetarian Pizza Bagels

  • Slice the bagels evenly using a serrated knife to get clean cuts without damaging the bagel.
  • The longer the sauce has had the time to sit and meld the flavors together, the better it would be. Once the no-cook sauce is mixed together, refrigerate overnight for the best flavors.
  • Mix it up and try different cheeses like Monterey jack, cheddar, swiss or even gruyère to add different twists and turns to the bagel pizza experience.
  • For a more overall toasted bagel, bake the assembled pizza bagels for 5-8 minutes before turning on the broiler to finish browning the cheese.

Other Topping Ideas for Healthy Veggie Pizza Bagels

  • Sautéed mushrooms
  • Spinach
  • Pineapple
  • Banana peppers
  • Arugula: Be sure to add as a topping immediately before serving.
  • Sliced tomatoes
  • Corn
  • Olives
  • Avocado: If adding, make sure to add at the end after the pizza bagels have finished baking.
  • Jalapeños
  • Imitation meat products: Such as Beyond Sausage or vegetarian pepperoni.
  • Sautéed tofu
  • Paneer

  • Classic Basil Pesto Sauce

Can I Make Vegetarian Pizza Bagels in Advance?▼

These Healthy Vegetarian Pizza Bagels can be excellent when made ahead, for a fun snack or even meal prep. Simply pop the bagels in the oven at 350 F to reheat until toasty. For a faster and equally tasty experience, you can microwave the pizza bagel for 30 seconds and then place on a preheated non-stick pan with some oil or butter to toast the bagel with the lid on to heat the pizza bagels right back up.
