Blueberry Oatmeal with Honey - a Super Breakfast with Super-foods!
This creamy and sweet blueberry oatmeal with honey and chia seeds is one powerhouse of a nutritious breakfast! Trust me! We’ve got a hunger-crushing combination of oatmeal, blueberries, and chia seeds. All three of these ingredients have lots of fiber, which I think is an important consideration to make when you’re deciding what to have for breakfast. According to P&G, having lots of fiber in the morning will help you feel satisfied until lunchtime. In fact, one of their breakfast ideas is overnight oats with berries!
I used frozen blueberries to achieve this look because the juices from the blueberries just seeped into the milk while cooking, while the additional blueberries on top also added a vibrant pop of colour. Unfortunately, you may not get this result with fresh blueberries, so I do recommend that you use frozen blueberries. You could try using frozen blueberries while cooking the oats and top with fresh blueberries if you’d like!

As we’ve established that the ingredients in this creamy and sweet blueberry oatmeal recipe are very nutritious and have a lot of utility in being part of a healthy breakfast, let’s be honest here and say these oats just look darn gorgeous!
You’ll want to start by cooking your oats. Add the oats and milk to your pot and bring to a simmer.
Then, add the chia seeds and vanilla extract.
Adding half the blueberries to the oat and milk mixture will make that milk the gorgeous purple color.
Now it’s time for the assembly! We’re going to add more blueberries to really achieve a lovely purple color throughout the entire dish. Topping the oats with some honey will add a glorious gloss on top. Finally, we’ve got the show-stopper here, which is the white chocolate chips! Of course you can use whichever type of chocolate chips you like, but the white chocolate chips not only add that extra pop of color but white chocolate is so creamy, and I find that the richness of white chocolate goes so well with the blueberries!
