Air Fryer Aloo Patty Recipe
If you’ve been around for a long time, then you know I love patties! In particular, the potato puff patties are my all-time favourite, and they sure do hold a special place in my heart.
Potato puff patties were a hit at my school’s cafeteria growing up, along with potato samosas. There were also paneer puff patties, paneer kulcha, coleslaw sandwiches, and wai wai (cup noodles), but my favourite from the selection was always the potato puff patties.

This may sound a bit sad, but oftentimes my sister and I didn’t have anything for lunch, nor did we have money to buy anything from the cafeteria! Like a vulture, I would hope that my friends would offer me some money to get a patty or would offer an extra patty for me to enjoy. If you’re one of my school friends reading this, you don’t know how thankful I am to whenever you’d help me out at lunch!
Furthermore, if I was lucky, sometimes my mom would give some money when she was picking us up from school, and if there were still patties in stock at the cafeteria, I’d buy one on the way home! Honestly, I went pretty much every day salivating over these patties! Not only is the flaky and crispy exterior of the puff pastry extremely addictive, but what I absolutely love about these patties is the little brown bits of the potato filling that are on the outside, as a little bit leaks out of the seams of the puff pastry.

Anyhow, those days are long gone now, and while I’m no longer in school or in India, the beauty of being able to cook for yourself is that you can recreate your favourite foods from the comfort of your own home, whenever you want! I’ve always prepared these patties in the oven, but today I’m going to refresh the recipe by sharing an air fryer version! I love air fryer cooking since the preheating time and the cooking time are much faster, and it’s super convenient since it’s right there on your countertop!

What is Puff Pastry?▼
Puff pastry is a light and flaky pastry made from layers of dough and fat, typically butter. The process of making the flaky pastry is called “lamination,” where the dough is rolled and folded repeatedly to create thin layers. When baked, these layers expand due to steam, resulting in a puffed-up, airy texture.

Puff pastry is extremely versatile! You can use it for both sweet and savory dishes. In Indian cooking, the famous way of using puff pastry is in savory patties, such as this potato patty! Here are other puff patty options that are available:

Can This Air Fryer Aloo Patty Recipe Be Vegan?▼
In theory, you can make this potato patty recipe vegan, but it all depends on puff pastry. By definition, puff pastry is usually made with butter. I can’t even find a vegan puff pastry option at my local grocery store, and could only find it on a niche website online. So, a true patty probably wouldn’t be vegan, but if you know what to do, then let me know in the comments!

Tips to Master This Air Fryer Aloo Patty Recipe
- Ensure that the puff pastry has thawed for long enough before unrolling - don’t do it if the pastry is still frozen!
- Optionally, dust the work surface with flour to prevent the puff pastry from sticking if it thaws too quickly during assembly.
- Allow the potato filling to completely cool down before adding it in the puff pastry.
- Bake the patties directly on the tray of the air fryer to get a perfect golden brown color on the puff pastry.
- Ensure that the puff patties rest for a few minutes after baking to allow the pastry to cool down. Although you may want to eat immediately, exercising some patience allows the flakes of the puff pastry to be crispy and light.

Ingredients for Indian Air Fryer Aloo Patty

You can also scale the recipe based on how many patties you want to make so you have the right amount of potatoes and puff pastry sheets!

For the Potato Mix
- Oil: Olive oil or ghee.
- Boiled potatoes: You can boil your potatoes in a large pot over the stove or use your Instant Pot. Check out my guide to perfectly boiled potatoes in the Instant Pot!
- Whole spices: Hing/asafoetida and cumin seeds.
- Aromatics: Green chiles, ginger, onion.
- Ground spices: Turmeric, ground coriander, and salt.
- Lime juice
For the Patties
- Puff pastry: I use frozen puff pastry sheets.
- Egg: To brush on top of the puff pastry to get a perfect golden brown color.
How to Make the Best Indian Air Fryer Aloo Patty Recipe
For the Potato Mix
To steam potatoes in the Instant Pot, follow the instructions here. Otherwise, heat up a pot of water and boil potatoes until tender. Peel the potatoes once cooked.
Heat oil/ghee on medium heat and add pinch of hing, cumin seeds, green chiles and ginger. Saute until aromatic.






Add onions, turmeric and a pinch of salt and cook until the onions soften.




After 2-3 minutes, add ground coriander and a splash of water to prevent the dry spices from burning.


Once the onions have softened, add the potatoes to the pan and mix well. Season to taste and once well combine, finish with lime juice.






Let the potatoes come to room temperature before starting to assemble the patties/turnovers.
For the Patties
Preheat the air fryer at 300 F.
Lightly whisk an egg and set aside.

Cut the puff pastry into squares and add 1-2 spoonfuls of the potato mixture at the center of the square.




Fold the square diagonally into a rectangle and align the edges. Using the tines of a fork, seal the edges. Repeat for any remaining portions.



Brush the tops of the patties/turnovers with the egg and place onto the tray of your air fryer basket.

Air fry for 25-30 minutes or until the patties/turnovers are puffy and golden brown all over.

Set aside on a cooling rack and let it rest for 15-20 minutes. Serve with your favourite dipping sauce and enjoy!



I Don’t Have An Air Fryer! How Can I Make These Patties in the Oven?▼

Serving Indian Potato Puff Patties
My family thought I was always crazy for doing this, but I love my aloo puff patties with some ketchup. Since I first shared this recipe online, it turns out I’m not the only one who likes puff patties with ketchup, so that’s reassuring! If you haven’t tried patties with ketchup, then I encourage you to try it!
If you wanted to pair these aloo puff patties with a chutney, then you can’t go wrong with a Cilantro-Mint Chutney or Tamarind Chutney! Alternatively, these would also be delicious with your favourite hot sauce.

Can I Make This Air Fryer Aloo Patty Recipe in Advance?▼
Yes, you definitely can! Simply allow the patties to cool down and transfer them into an airtight container and store in the fridge. You can keep your aloo puff patties for 3-4 days.

Can I Freeze Potato Puff Patties?▼
No, I really would suggest you don’t. When reheating, the potato filling will become mushy, and the puff pastry is likely to get soggy. These are snacks that are enjoyed as fresh as possible!
Reheating Aloo Puff Patties
You can reheat your puff patties quickly in the microwave for about 45 seconds to a minute. You don’t want the patties to be reheated for too long or else the puff pastry will become soft and lose its crispiness.
