Let me be a bit honest with all of you. I only first tried a tomato sandwich after I turned 18. And that’s because I had a severe aversion to raw tomatoes. The pulp and the strong flavor is something that I could not view myself eating. Something in me wanted to give it a try and so I did. I beat myself (not literally) that I hadn’t tried it earlier. It is fresh, vibrant and I actually started enjoying the flavor.
When it comes to cucumbers, they were always my friend. There is something special about the combination of creamy butter with juicy cucumbers, salt and pepper that is so satisfying. Plus, not so long ago a friend at work introduced me to a cream cheese cucumber sandwich. Now that’s a genius touch, and I’m definitely going to be implementing that fantastic idea in this recipe for you!
This recipe is one of my simple childhood favorites. These cucumber and tomato sandwiches were made by my family’s dear cook. The usual combo I had was butter, cucumber, green chilies, salt and pepper. Simple but so good! I’ve shared this so many times on my Instagram stories!

How to Make Cucumber Tomato Sandwiches
It’s not difficult to make these cucumber tomato sandwiches at all! If you want to get your kids involved in the kitchen, this is a perfect place to start! Here’s what you need to do:
I like to start with a flavorful bread such as rye or sourdough. Get the bread of your choice on a work surface.
You can butter your bread if you like, but it’s not mandatory. I used to butter my bread all the time when having just cucumber sandwiches or cucumber and tomato sandwiches. I feel it’s not necessary with the cream cheese, but if you want to butter your breads do this first.
Add the cream cheese on two slices of bread. If you wish, you can freshen up the cream cheese with fresh herbs like dill or chives.
Spread the cream cheese evenly across the slices of bread.
The secret lies in thinly sliced cucumbers and tomatoes. The thinner they are, the better! So, layer the cucumbers for cucumber sandwiches and tomatoes for tomato sandwiches. Try to layer as much as possible and cover every corner of the bread.
Sprinkle chopped green chilies if using and season with salt and pepper.
Get two more slices of bread and add cream cheese to them.
Close the sandwiches, gently apply pressure to seal and cut diagonally to serve. You can even cut it into 3 pieces for smaller sandwiches. Enjoy!
Storing Cucumber Tomato Sandwiches
The sandwiches can be served immediately or refrigerated up to 24 hours. If you’re making the sandwiches for later, cover the sandwiches in plastic wrap or aluminum foil or put them in an airtight container
