Let me be a bit honest with all of you. I only first tried a tomato sandwich after I turned 18. And that’s because I had a severe aversion to raw tomatoes. The pulp and the strong flavor is something that I could not view myself eating. Something in me wanted to give it a try and so I did. I beat myself (not literally) that I hadn’t tried it earlier. It is fresh, vibrant and I actually started enjoying the flavor.

Look at me today! I add raw tomatoes or cherry tomatoes in my salads or bowls all the time! Some of these recipes include Mediterranean Pasta with Summer Veggies, a Quick and Healthy Lentil Salad, and a Baked Tandoori Chicken Sandwich.

When it comes to cucumbers, they were always my friend. There is something special about the combination of creamy butter with juicy cucumbers, salt and pepper that is so satisfying. Plus, not so long ago a friend at work introduced me to a cream cheese cucumber sandwich. Now that’s a genius touch, and I’m definitely going to be implementing that fantastic idea in this recipe for you!

This recipe is one of my simple childhood favorites. These cucumber and tomato sandwiches were made by my family’s dear cook. The usual combo I had was butter, cucumber, green chilies, salt and pepper. Simple but so good! I’ve shared this so many times on my Instagram stories!

With this recipe, you can prepare them ahead of time for a take along lunch, perfect for work or school! You can also prepare them for family picnics. These sandwiches are such an easy option for when you want a simple but refreshing sandwich! They can be made in about 5 minutes, so they’re great for a yummy grab-and-go option!

Great Finger Sandwiches

If you are the kind that hosts parties for your children or tea parties, these cucumber tomato sandwiches will be a great option to put together quickly. Cream cheese would be a must for such an occasion, I think it is one of the unspoken rules of these reunions!

How to Make Cucumber Tomato Sandwiches

It’s not difficult to make these cucumber tomato sandwiches at all! If you want to get your kids involved in the kitchen, this is a perfect place to start! Here’s what you need to do:

I like to start with a flavorful bread such as rye or sourdough. Get the bread of your choice on a work surface.

You can butter your bread if you like, but it’s not mandatory. I used to butter my bread all the time when having just cucumber sandwiches or cucumber and tomato sandwiches. I feel it’s not necessary with the cream cheese, but if you want to butter your breads do this first.

Add the cream cheese on two slices of bread. If you wish, you can freshen up the cream cheese with fresh herbs like dill or chives.

The secret lies in thinly sliced cucumbers and tomatoes. The thinner they are, the better! So, layer the cucumbers for cucumber sandwiches and tomatoes for tomato sandwiches. Try to layer as much as possible and cover every corner of the bread.

Sprinkle chopped green chilies if using and season with salt and pepper.

Get two more slices of bread and add cream cheese to them.

Close the sandwiches, gently apply pressure to seal and cut diagonally to serve. You can even cut it into 3 pieces for smaller sandwiches. Enjoy!

Storing Cucumber Tomato Sandwiches

The sandwiches can be served immediately or refrigerated up to 24 hours. If you’re making the sandwiches for later, cover the sandwiches in plastic wrap or aluminum foil or put them in an airtight container

They're light tea-style finger sandwiches — cream cheese, thinly sliced cucumber and tomato between soft bread, cut into neat triangles. Perfect for afternoon tea, brunch or a picnic.

How do I keep them from getting soggy?▼

Spread cream cheese (and a little butter, if you like) right to the edges of every slice of bread — it forms a barrier against the moisture from the cucumber and tomato. Slicing the vegetables thinly helps too.

What herbs go in the cream cheese?▼

Finely chopped dill or chives mixed into the cream cheese. They add a fresh, savoury note that lifts the whole sandwich without overpowering the cucumber and tomato.

Are they spicy?▼

Not unless you want them to be. Finely chopped green chilies are an optional add-in for a little heat — leave them out for a classic, mild tea sandwich.
