This cucumber and boiled egg toast recipe is a that I'm sure you're going to love! I honestly have no idea how but this was inspired by gorgeous fish scales - no joke! The cucumbers work wonderfully well with the eggs and the chili oil brings a nice kick.

Back to the inspiration, I simply love how the final product for this cucumber and boiled egg toast recipe ends up looking. It is completely optional to arrange the eggs and cucumbers in these layers, but I really think it adds a lot to the entire experience.

Ingredients for This Fresh and Tangy Cucumber and Boiled Egg Toast Recipe

  • Boiled eggs: The perfect boiled eggs for me is right between medium and hard boiled. We’ll quickly discuss how to make boiled eggs over the stove in this recipe.

  • Cucumber: Cucumber slices are key to adding freshness and plays interestingly with the creamy egg.

  • Bread: My recommendation is a good quality rye bread, the complex flavours of it helps balance out the meal.

  • Chili oil:Adds some spice and good fats if you use a chili olive oil.

  • Chili flakes: Completely optional but super delicious!

  • Salt and pepper: Season the eggs and the cucumber to unlock the flavours.

What if I Don’t Have Chili Oil?

Don’t be intimidated by fancy terms like chili oil or compound butter. All it is, is a combination of flavours added to scent and flavour the oil or butter. Chili can easily be prepared at hope, however keep in mind that this may take several weeks to get ready.

To prepare homemade chili oil, you would need 1/4 parts dried chiles and 3/4 parts good quality olive oil. Simply remove the stem, and chop the chiles into smaller pieces (with the seeds). Add them to a clean jar with the oil. Let the oil sit and “marinate” for 2-4 weeks. As time passes, the oil will be tinted red.

This sounds like a lot of work, but great if you plan ahead.

As a much quicker alternative, heat up some olive oil in a pan and add a pinch of red chili flakes (to your taste). Sauté for 1-3 minutes and transfer the oil to a clean jar/ramekin. The oil would have been scented and coloured - albeit not as flavourful as the previously mentioned recipe.

How to Make the Perfect Creamy Boiled Eggs

  1. The perfect spot between medium boiled and hard boiled is 7.5 minutes

  2. To boil the eggs, place eggs at the bottom of the sauce pan. Make sure you don’t overcrowd the pan.

  3. Fill pot with cold water until it covers the eggs completely

  4. Bring the water to a rolling boil, cover the pot and set a timer for 7:30 minutes

  5. While the eggs boil, prepare an ice water bath. The ice water bath helps prevent the eggs from overcooking once taken out of the boiling pot of water.

  6. After timer completes, use a slotted spoon to transfer the eggs to the ice water bath. Let cool for about 10 minutes.

  7. Using a butter knife or spoon, crack the shell. Rinse as necessary to remove any small buts of shell.

How to Cut Perfectly Sliced Eggs

From my experience, the cleanest way to slice the perfect eggs is to use an egg slicer. I got one as a gift from my mother, at first I did not see how it was better than just using a knife. But after I tried using it, I saw how effective the slicer was at cutting perfect portions.

How to Prepare This Fresh and Tangy Cucumber and Boiled Egg Toast Recipe

After boiling and slicing the eggs above, toast the bread to your liking. Carefully start arranging a layer of cucumbers, followed by overlapping layer of eggs and so on, until the entire slice of toast is fully covered. 

Finish with a drizzle of chilli oil and chilli flakes. Serve immediately and enjoy!

  1. Boil water in a saucepan. When it has a rolling boil, then you add the egg carefully using a spoon and cook for 7.5 minutes. Cook for longer if you like a fully-cooked yolk.
  2. Prepare an ice-water bath. Transfer the egg and let the egg cool for at least ten minutes.
  3. Toast your bread to your preference. While the toast is toasting, cut the cucumber into thin slices. After the egg has cooled down, peel it.
  4. Using a sharp knife or an egg slicer, thinly slice the eggs lengthwise. Carefully start arranging a layer of eggs, followed by overlapping layers of cucumber until the entire slice of toast is covered.
  5. Finish with a drizzle of chilli oil and chilli flakes. Serve immediately and enjoy!
