Quesa-Whaaa?

Quesadillas are interesting to me. I gotta say, the classification of what’s a quesadilla versus what’s a fajita versus what’s a taco is kind of confusing to me. They all seem pretty much the same in my books! Someone should write a guide about the distinction! (Possible blog post, anyone?) Whatever each dish is, though, I love them all! Seriously, since I came to Canada, I go loco for Mexican cooking!

Doing some research on this peculiar topic, it seems that quesadillas are heated tortillas with cheese and other goodies inside. Sounds like a taco to me , but I guess it’s that flat shape and the cut that makes it a queso - as I like to call it! Okay, sounds good! Let’s go with that! #themoreyouknow.

With that English/Mexican lesson out of the way, let’s move on to how much I love quesadillas. Even though I wasn’t 100 percent certain of what I was making, I love them! These little gems are a ton of fun to try out new fillings and explore the endless combinations - both for lunches and for dinners!

I still have yet to have many Mexican meals at restaurants though. I know, I’m missing out. I’ve had some vegetarian tacos and chicken tacos, and I think that’s it! Never had fajitas, never had quesadillas. But that’s why we can conveniently cook these things at home, though, right? This is all on my bucket list, however!

Ingredients for Oven Baked Quesadillas with Ground Beef

  • Ground beef: Use whatever leanness of ground beef you’d like. I’m using extra lean ground beef, but you wouldn’t go wrong with lean or even medium ground beef for more juiciness! We’ve got cheese and sour cream, however, so the leaner meat makes a nice balance.
  • Chopped green chilies: In Indian cooking we use green chilies in almost everything! However, these green chilies are Mexican and are pickled, so they add a different flair to this beef mixture than would the traditional Thai green chilies I typically use.
  • Salt and pepper: A must to season your food!
  • Olive oil: Used to cook the beef filling.
  • Taco seasoning: I’d rather make my own taco seasoning, but feel free to purchase a ready-made blend. Check out myExcellent Quick and Easy Homemade Taco Seasoning recipe if you’re interested in making your own!
  • Mozzarella cheese: I’m using mozzarella here because I really want to complement the beef. Mozzarella is also awesome because of the delicious cheese pulls you’ll get, but feel free to try cheddar cheese or a combination of the two! If you have access to it, the truly authentic cheese to use for this recipe would be Queso fresco.
  • Flour tortillas: You could use plain tortillas or you can feel free to use a flavoured one if you like!
  • Homemade fresh guacamole: Of course you can use a store-bought one, but I’d rather make my own to control the seasoning and the flavours. Check out how to make anIncredible Easy Homemade Guacamole if you’re looking to make your own and are not sure where to start!
  • Sour cream and Pico de Gallo: For topping. I’ll be following my Pico de Gallo recipe here!

How to Make These Crispy Oven Baked Beef Quesadillas

How to Make the Beef Mixture

Sauté the beef: Heat a large, non-stick pan on medium heat. When the pan is hot, add the olive oil. As soon as the oil gets hot, add in your beef. Using a wooden spoon or spatula, break the large chunks of meat down until most of the meat has browned.

Season the beef: Add in salt, pepper, and taco seasoning. Combine the spices.

Add chopped green chilies: Mix well and turn off the heat.

Making the Crispy Beef and Cheese Quesadillas

If you are baking - preheat the oven to 400 F. You can prepare the beef mixture as the oven preheats.

Assemble the quesadillas: On one tortilla, add a third of the beef mixture, the guacamole, and the cheese. Fold the quesadilla in half, and gently press down to ensure the ingredients are combined together. Repeat with the remaining tortillas.

Bake: Brush each side of the quesadillas with olive oil and bake in the oven for 5-7 minutes on each side, flipping them halfway through the cooking time.

Cook until light golden brown.

To pan fry: Brush each side of the quesadillas with olive oil and heat a non-stick pan on medium heat. Fry the quesadillas for 2-5 minutes on each side until golden brown.

Finish the quesadillas: Once the quesadillas have finished baking, transfer them onto a cutting board and cut them in 2-3 equal sized triangles.

Top with pico de gallo and sour cream.

What’s the Best Cheese for this Baked Beef Quesadilla Recipe?▼

This recipe uses mozzarella cheese because I really wanted these quesadillas to be creamy with the guacamole. Mozzarella cheese is amazing for cheese pulls! You could use cheddar if you’d like, but I’d also recommend Monterey Jack!

What size of tortilla should I use for this Crispy Beef Quesadilla Recipe?▼

For quesadillas, you want to use 10 inch tortillas, also referred to as large tortillas. You’ll be able to add more filling in those tortillas than in the 8 inch tortillas, and you’ll be able to cut your quesadillas into good-sized triangles!

What’s the Difference between baking and pan-frying the Beef Quesadillas?▼

In one word, smokiness. I quite enjoy the char and toastiness from pan frying the quesadillas vs baking them in the oven. Also, it takes a lot less time to pan fry the quesadillas because you’re saving time from the oven pre-heating, and I find the quesadillas cook faster on the pan overall.

With the oven baked method though, it’s much more convenient to get an even crispy all throughout and to prepare several quesadillas at once. Both are delicious, you pick, and be sure to let me know which method is your favourite! !

What to Serve with Cheesy Quesadillas with Ground Beef

You can totally serve these quesadillas on their own and they’ll be so delicious! However, the toppings are what make the quesadillas really fun! You can mix and match the toppings I have shown here and even enjoy some side dishes! Here are some ideas:

  • Greek yogurt
  • Lime wedge
  • Salsa
  • Black Bean Salsa
  • Indian Style Spicy Corn
  • Chunky Mango Guacamole
  • Boiled Rice
  • Loaded Cheese & Bacon Air Fryer Fries

Tips for the Best Quesadillas with Ground Beef

  • Leave a small gap at the edges of the tortilla to provide room for the toppings to spread as you fold and cook the quesadillas.
  • Season the meat before all of it has turned brown for the maximum amount of flavour.
  • A low profile spatula - like a fish spatula is great to flip and handle the quesadillas gently.
Can I make Cheesy Beefy Quesadillas in advance?▼

To be honest I would serve the quesadillas fresh because the cheese will be nice and molten and the outside will be crispy! If you have leftovers, however, then you can certainly reheat them. If you know that you will be eating these laters and you want to make them ahead of time, what I would recommend is that you prepare all your elements and put it together when you’re ready to eat.

Storing Leftover Ground Beef Quesadillas

I recommend you wrap your quesadillas in aluminum foil or transfer them into an airtight container. The quesadillas will stay fresh in the fridge for one day at most. I wouldn’t recommend going beyond a day since you will risk making the tortilla really soggy if you go for too long. Additionally, we have meat and cheese in there, and we don’t want those to spoil.

How to Reheat Cheesy Quesadillas With Beef▼

You can reheat your quesadillas over the stove or in the oven. To reheat over the stove, place a non-stick pan on medium-low, and heat until the cheese is molten and the quesadilla is entirely warmed through.

To reheat in the oven, preheat the oven to 400. Place the quesadillas on a baking sheet and heat until the cheese is molten and the beef filling is entirely warmed through.

When you reheat the quesadillas, they won’t be as crispy on the outside as when they are freshly made, but they’ll still taste delicious!
