All About Taquitos
Taquitos, also known as flautas in some regions, have roots deeply embedded in Mexican street food culture. The word "taquito" means “small taco” in Spanish, and these rolled, filled tortillas are believed to have originated in Mexico as a practical, handheld snack. These snacks are perfect to serve street-side and to have for celebrations!
Traditionally, taquitos are made with shredded beef and chicken, enveloped by corn tortillas, then deep-fried to a golden crisp. Their portability makes them a favorite for everyone, symbolizing convenience and deliciousness!
Over time, taquitos crossed borders and gained popularity in the United States, especially in the Southwest, becoming a beloved part of Mexican-American cuisine. Today, they represent a delicious fusion of tradition and innovation, where classic flavors meet modern cooking methods — like your game-changing air fryer recipe!
Why These Air Fried Taquitos are a Game Ganger
Really quick recipe: This recipe will be super fast to make! If you’ve got your chicken already prepared, then this saves even more time! All we’ll need to do is make our chicken filling, roll, then air fry!
Minimal oil: Authentic Mexican taquitos are typically deep fried, which requires a significant amount of oil. On the other hand, air frying will require minimal oil. We’ll just need oil to make the chicken mixture and spray a little on top over the tortillas to help get the exterior golden brown and crispy.
Easy to prep and clean-up: Dealing with deep frying can be a little difficult. You have to put a lot of oil into your wok, and then you need to ensure you’ve got the right frying temperature. Deep frying can be a messy hassle when you think about the leftover oil you’ll be left with, a slotted spoon to manipulate the taquitos with, and paper towels all over your counter to absorb the excess oil. Air frying clean-up is much simpler and less daunting!
Nutritious: These air fryer taquitos are much healthier than their deep fried counterpart! We’ll go over the nutritional info in a bit to see why you can easily make these part of your daily meal rotation - no need to save these taquitos only for Cinco de Mayo!
Lots of variety: You can customize these air fryer taquitos to make them your very own! I’ll list out plenty of filling and topping variations later on in this post, so be sure you don’t miss that!
Dietary Information for These Air Fryer Chicken Taquitos

What Air Fryer Are You Using?
I’m using the Cosori Air Fryer 6 Quart 9-in-1 air fryer to make these chicken taquitos. Prior to this air fryer, I owned the Ninja Dual Basket 6-in-1 air fryer. I liked the concept of having two baskets so that I could make two different dishes at the same time, and I could set the two baskets at different cook times and temperatures. While that was handy, unfortunately not too long after I’ve purchased the air fryer - honestly probably about 8 to 9 months - one of the baskets broke! I didn’t see the point of keeping it since it didn’t fulfill its purpose, and I didn’t believe it had any sale value so I had to chuck it away. If you want to learn more about the end of that air fryer, be sure to watch this video. This month will mark the one-year point with my current air fryer, and it’s still working fantastic! I love the large basket and how it’s not very noisy at all. For a more in-depth review of my Cosori Air Fryer, I recommend you watch this video.

For all ingredient quantities and to save the recipe for later, scroll to the bottom of this post for the FULL PRINTABLE RECIPE CARD or by pressing the “Jump to recipe” button. We’ll review the ingredients needed for our chicken mixture, and I’ll share topping ideas later on! You can also use the recipe card to scale the recipe based on how much chicken you have on hand so you can know how many taquitos you’ll end up with! By default, this recipe will yield 16 taquitos.
Chicken: To make this simple to execute, I’m using my favorite rotisserie chicken. However, feel free to use chicken breast that’s been poached and then shredded, or just shred up any leftover chicken you have!
Onions: Use red, white or Spanish onions - whatever you have on hand. We’ll sauté these before adding in the chicken.
Garlic: Minced garlic cloves to sauté with the onions.
Tortillas: Corn tortillas are the best choice here since they’ll get extra crispy in the air fryer without deep frying. They’re also the authentic choice for Mexican taquitos. If you want to use flour tortillas you can, but they are usually typically used for flautas. Look for tortillas that are 4 to 5 inches.
Oil: I’m using avocado oil here because it has the highest smoke point out of all the cooking oils, making it perfect to apply onto the surface of the taquitos to get them nice and crispy. I find that when you air fry with too much olive oil it can burn and tarnish the flavour of your food, and I’ve had better results experimenting with some other oils. I recommend that you get the avocado oil in liquid form and transfer it into a spray bottle instead of getting cooking spray. I don’t like the chemicals in those, plus it’s cheaper to use the liquid and spray it yourself! As an alternative to avocado oil, coconut oil can also work really well.
How to Make Air Fryer Chicken Taquitos
Heat avocado oil in a pan over medium heat.
Add garlic, then onions with a pinch of salt. Cook until softened. Add paprika, then stir in shredded chicken. Warm through and season to taste with salt and pepper. Keep warm.
At the same time, preheat the air fryer to 400°F and warm tortillas until soft and pliable. Keep covered so they stay warm.
Working with 2 tortillas at a time, add 30 g chicken mixture to each. Roll tightly into cigar shapes and secure each pair with a toothpick so the seams face inward.
Lightly spray both sides with oil. Air fry for 8–9 minutes, flipping halfway, until crisp and golden.
Remove toothpicks and arrange on a plate. Top with crema, shredded lettuce, cotija, pico de gallo, salsa roja, and cilantro.
Mistakes You Might Be Making with Air Fryer Taquitos!
While this air fryer chicken taquito recipe is fairly simple and easy to follow, there are still some mistakes that could happen along the way. The photo below shows a very dry and slightly burnt taquito that was made by over-heating the tortilla, not spraying it with oil, and not flipping it halfway through the cook time. Learn about these potential mistakes and how to fix them so you end up with taquitos like the other photos on this page! Also, be sure to watch the recipe video so you see a taste test between this bad taquito versus the proper ones!
A wet filling: Our filling in this recipe won’t be wet, but if you are making a creamier filling or a filling that contains tomatoes, then you’re more at risk for the taquitos to get soggy. I chose this drier filling because from authentic Mexican taquito recipes I’ve seen, the filling is quite simple and on the drier side, such as this one. If your filling is going to be on the wetter side, ensure you remove as much moisture as you can before stuffing it in the tortillas. The filling below is the one we’re using!
Not having the tortillas at the right temperature: The tortillas need to be slightly warmed so that they are pliable and you can roll them easily. This can go wrong both ways. If your tortillas are not warmed at all, well, you won’t be able to roll up the taquito at all, as you can see below.
On the other hand, if you have a tortilla that’s too toasted (you’ll see brown spots on the tortilla), then it will crack, and it is likely to burn or get very dry in the air fryer. What you want to do is slightly warm up the tortillas, either on a wire rack with tongs or for a couple of seconds in the microwave. Keep the tortillas warm in a bowl covered with a kitchen towel until it’s time to add the filling and roll.
Not preheating the air fryer: Preheating the air fryer ensures that the food will start cooking immediately when you add it into the air fryer basket. If you don’t do this, the air fryer will be taking the first few minutes to heat up, and this won’t cook the food properly and evenly. Preheating the air fryer will allow for consistent and reliable cook times.
Over-stuffing the taquitos: Two tablespoons of chicken filling per taquitos using 4- to 5-inch tortillas is the magic number here! If there’s too much, the taquitos could unroll and fall apart.
Not adding oil: Oil is a non-negotiable! We need to spray both sides of the taquitos before air frying to prevent the tortillas from burning and to achieve the amazing golden brown colour we’re looking for. We want some crunch without a char! Here’s how the dry taquito looks like without oil.
There’s a reason traditionally taquitos are shallow fried - the oil really helps!
Over-crowding the air fryer basket: The air fryer needs hot air to circulate to cook and colour the food. You need enough space for the air flow to move around and distribute the hot air evenly. Make sure to space out the taquitos in the air fryer basket - the pairs will have a small gap so they aren’t stuck together. If you have too many, then be sure to cook in batches!
Not flipping the taquitos: If you don’t flip the taquitos halfway through, one side will get very brown, while the other will be pale. Every oven and air fryer has hot and cold spots and flipping them ensures we can account for this and cook the taquitos evenly. Flip halfway through the cooking time so both sides of the taquitos are an even golden brown and crisp. The taquito below was overly dry and burnt tasting when not oiled and not flipped halfway through!
Variations And Add Ins For Different Flavors
Creaminess: You can add in some cream cheese, sour cream, or creme fraîche in your chicken filling.
Spice: Feel free to use taco seasoning or chili powder to season the chicken filling.
Serving Suggestions And Dipping Sauces
Dips and sauces: Tomatillo Salsa Verde, Salsa Roja, Guacamole, Avocado Lime Crema, sour cream, crema, crème fraîche.
Cheese: I’m using queso cotija cheese. You could also use queso chihuahua cheese or your favourite Mexican cheese blend.
Sides: You can do a simple salad, such as my Arugula and Goat Cheese Salad. Alternatively, you could even have some rice, such as Chipotle-Style Cilantro Lime Rice or Mexican Red Rice.
Fresh toppings: Lettuce, sliced avocados, fresh cilantro, Pico de Gallo, sliced jalapenos, sliced green onions.
Questions You May Have!
How to Store Leftover Taquitos
While these taquitos are definitely best served fresh, if you have leftovers then don’t worry about it at all! Simply transfer the taquitos in an airtight container and place in the fridge. For best results, I recommend you store the taquitos without toppings so that they won’t become soggy. A confession - however - is that I did store them with all the toppings, since I had leftovers after making this video! I did have to eat them cold since there’s no easy way to heat them up with all the toppings. Actually, they’re pretty tasty, but I’m not sure you would like to do this! These taquitos will last for about 3 to 4 days in the refrigerator.
Can I freeze leftover taquitos?
I wouldn’t recommend you freeze your cooked taquitos since reheating them will make them extra dry. What I do suggest you do is to freeze assembled taquitos. Ensure to secure the taquitos with a toothpick as described above, then place them straight in a large freezer bag. You can freeze the taquitos for up to 2 months. When you’re ready to cook them, you can cook them directly from frozen - just add a few extra minutes to the cook time to ensure the filling is warmed through.
Can I use flour tortillas instead of corn?
If those tortillas are all you have on hand, then don’t worry about it! You definitely can, however, corn tortillas are traditional and crisp up better in the air fryer. Flour tortillas tend to be softer and are usually used for flautas.
What’s the best way to reheat taquitos without losing crunch?
You can use the “Reheat” setting on your air fryer. This will heat the taquitos at 350°F for 3-5 minutes or until the chicken filling is warm inside. This will help to restore the golden crisp without the taquitos getting soggy.
Can I make these vegetarian or vegan?
While these taquitos will no longer be chicken taquitos, if you want to make air fryer taquitos vegetarian or vegan, then go for it can! Here are some good vegetarian or vegan choices:
Tofu: You can use the same filling and replace the chicken with some grated tofu.
Cheese: You can omit cheese altogether or replace it with a plant-based option.
How do I prevent the taquitos from unrolling while cooking?
Make sure to secure each taquito with a toothpick after you’ve finished rolling. For best results, I put them together in pairs - for no other reason than to use the toothpicks more efficiently. If you have long enough skewers, you could technically link together multiple taquitos together which would come handy to handle the taquitos as they cook - either shallow fried, deep fried, oven baked or air fried. Roll up one, and turn it seam-side up and secure the toothpick. After you’ve rolled your second one, have this one seam-side up as well, and insert the toothpick into this taquito. Repeat with all your taquitos. Furthermore, if you are baking or air frying them, it’ll be essential to spray the taquitos lightly with oil to help them crisp up and hold their shape.
