Cozy Soup and Stew Recipes for Cold Nights

Easy Soup and Stew Recipes
It took me a while in my cooking journey to get excited about soup. Now soup season is one of my favorite parts of the year. After enough Canadian winters, a pot of something warm on the stove is exactly what I want when the temperature drops.
These are the soup and stew recipes I keep coming back to: the Portuguese beef stew I make whenever I want meat and potatoes, a Moroccan chicken and chickpea stew I've been making for years, and the French onion soup that sat on my bucket list for far too long.
You'll find hearty stews, chili recipes, classic soups and the dals I grew up on. Plenty of them are one-pot or Instant Pot recipes, so they work on a weeknight too.

Which Soup or Stew Should You Make Tonight?
- Short on time: One-Pot Tex Mex Chicken Noodle Soup or Instant Pot Beef Chili.
- A slow Sunday: Beef Bourguignon or Portuguese Beef Stew, both cooked low and slow.
- Meatless: Instant Pot Vegetarian Chili, Vegan Minestrone or White Bean Harissa Stew.
- Comfort from home: Dal Tadka. Dal was on the table almost every day when I was growing up. I used to dread lentil night; now it's one of my favorite comfort bowls.
Finish a tomato or French onion soup with a handful of homemade croutons.
