Ultimate Cheesy Mozzarella Fries

  • 2 t Onion
  • 2 LB Russet potatoes
  • 3 Garlic cloves, minced
  • 1/2 Cup Heavy whipping cream



  1. Preheat the oven to 425 F. Wash your potatoes and cut them into 1/4 inch sticks. Once all of the potatoes have been cut, fill a large bowl with water and add the fries into the bowl. Let them soak for 25-30 minutes.
  2. Drain the potatoes and pat them dry using paper towel. Place the fries into a bowl and season with salt, cajun seasoning and olive oil.
  3. Line a baking tray with a sheet of parchment paper and place the fries on the parchment paper one-by-one. Ensure the fries don't touch each other so that they cook evenly. Place the tray in the oven and cook for 25-30 minutes.
  4. After the fries have baked for 25-30 minutes, take the baking tray out of the oven and flip the fries, and continue cooking for another 15-20 minutes, or until the fries are crispy on the outside and soft inside.
  5. Heat a pan on medium heat. Add the remaining oil and sauté the onions until they have become brown. Next, add the heavy cream and garlic and mix.
  6. As soon as the cream becomes warm turn the heat to low and add the basil to scent the sauce. Mix well and bring the mixture off the heat.
  7. In a large bowl, add the cheese. Pour the cream sauce mixture to the bowl with a sieve and a spatula.
  8. Stir the cream sauce with the cheese until its melted. Depending on the cheese you are using, you may need to have a double boiler in order for the cheese to completely melt into the sauce.
  9. When the fries have finished cooking, place them on a plate and pour the cheese sauce onto the fries. Serve hot and enjoy :)
