Strawberry Shortcake Pancakes

Hey everyone! Who loves fruits and is crazy for strawberries? This delicious, light and fruity rendition of Strawberry Shortcake brings the fun and flavour in a compact package for your breakfast. Perfect recipe for beginners, you will not believe how easy and delicious the caramelized strawberries are. One of my favourites and ideal for someone who loves the natural sweetness of fruit. Of course if you love sweet, sprinkle on the sugar. I like to be in control and every bite of these wonderful pancakes are lathered with pure Maple syrup to my preference. These pancakes will change your lives and make your Sunday brunch that much more special.

Ingredients

Makes 6

For the pancakes

  • 1 Large Egg
  • 160 G Rolled Oats
  • 2 t Baking Powder
  • 1 T Honey
  • 1 t Vanilla Essence
  • 2 t Butter or cooking spray, for cooking

Instructions

  1. Preheat the oven to 450 F. Arrange a baking sheet with parchment paper and spread the strawberries in a single layer. (if you have a sweet tooth, sprinkle 1-2 T sugar and toss to coat) Bake for 15 minutes, stirring every so often. Cook until strawberries are completely caramelized.
  2. In the meanwhile, add the oat flour, egg, honey, and baking powder in a large mixing bowl. Either begin whisking manually or turn on your stand mixer, and gradually pour in water until you get a thick but runny pancake batter.
  3. Heat a pan to medium heat. Add a bit of butter and scoop out about 1/4 cup of pancake batter onto the pan. Cook for about a minute or two, until the pancakes start forming bubbles, then flip on the other side. One both sides are cooked, transfer the pancake onto a baking sheet and leave it warm in the oven. Repeat this step for the remaining batter.
  4. Once strawberries are ready, transfer to a colander over a bowl and pour the strawberries. Let cool and drain excess juices for 10-15 minutes.
  5. When all the pancakes have cooked, start layering the pancakes in the following order. Equally layer pancake, caramelized strawberries, coolwhip. For the top one, add some coolwhip and top with rest of strawberries. Serve hot and enjoy :)
  • 300 G Strawberries, thawed if frozen
  • 6-8 T Light Coolwhip
  • Maple Syrup to taste.
