Spicy One-Pot Chicken and Rice

Hey everyone! This spicy one-pot chicken and rice is honestly one of my go-to quick dinner recipes. I always go to it because I love the flavours so much and it is really quick and simple to prepare. Check out the video above to see for yourself!

In this recipe I will be sharing how I make a delicious one-pot chicken and rice dish which I've come to love for an easy-to-prepare dinner option. The heat from the tomatoes and cayenne pepper bring amazing flavours and you're sure to enjoy. Also the one-pot aspect of the dish makes clean-up convenient, which we can all appreciate! Be sure to give this a try for the next time you're looking to have the simplicity of chicken and rice with but with a great kick! Get ready to cook up a storm and enjoy this dish that's perfect to dinner prep for either one or a large crowd!

Instructions

  1. Heat oven to 350F.
  2. Heat an oven safe high sided skillet on medium high heat.
  3. Season chicken on both sides with salt and pepper
  4. Add chicken to pan and sear for 3-4 minutes on each side until nice and brown. Set chicken aside on a plate.
  5. In the same pan, add your onion and garlic and sauté until tender. Season with salt and pepper and add in half of your cayenne pepper and toast the spices for about 1 minute while continuously stirring.
  6. Add in your tomatoes and rest of your cayenne pepper and cook until tomatoes start to turn mushy and soft.
  7. Add in your rice and sauté for about a minute. Next add in your wine to deglaze the pan and scrape up all the browned bits from the bottom of the pan.
  8. Add in your chicken broth, stir and when it comes up to a simmer, nestle in your chicken on top along with any resting juices.
  9. Cover with a tight fitting lid and place in oven for 40 minutes.
  10. Remove lid and garnish with fresh parsley if you like. Serve hot and enjoy!
