Spicy Mexican-Style Wrap with Scrambled Eggs, Bacon and Shrimp

Hey everyone! This spicy shrimp wrap with scrambled eggs and bacon is a wonderful delicacy I had made quite awhile back and wanted to have again! I originally just made this wrap with the eggs, bacon, and shrimp and it was super creamy. Adding the guacamole adds entirely new flavours and makes this wrap even more satisfying. Make it for a super satisfying lunch and enjoy :)


  1. Preheat the oven to 400 F. Add cajun seasoning to the shrimp, and place aluminum foil on a baking sheet. Add the shrimp and bacon and bake until they have cooked, about 10 to 15 minutes, turning once halfway through.
  2. Break the eggs in a cold pan and whisk them together. Start to heat the stove on high heat. When the stove is hot, put the pan on and whisk until the eggs start to cook, adding half of the butter. Begin using a spatula and continuously go on and off the heat. Ensure you mix the eggs thoroughly to ensure no eggs stick. As the eggs begin to form curds, switch to a spatula and add the remaining of the butter and season with salt and pepper. Continue to fold the eggs on and off the heat until you have reached the desired consistency.
  3. To assemble the wrap, spread the guacamole, then the eggs, bacon and shrimp on the tortilla. Serve hot and enjoy :)
  • 7 OZ Shrimp
  • 2 Tortillas of choice, store-bought or homemade
  • 1 T Butter
  • 2 Slices of bacon
