Spicy Bean Chilli Rice Bowl

Hey everyone! Here is an amazing bean chilli that I've been loving to whip up lately for awesome lunches. It can be made in about 15 minutes and has so much flavour from the cayenne and green chillies - beware of the heat though! I've had this chilli with homemade baked potato chips and rice, and it goes wonderfully with both of these! Be sure to try this recipe out and enjoy!

Instructions

  1. Heat a pan on medium heat. Add oil and add the garlic, and onion, cooking until the onions are soft and translucent.
  2. Add the tomatoes, salt, cayenne pepper and green chillies. Cook until the tomatoes become soft. In the meanwhile, cook your rice.
  3. Once your tomatoes have cooked, add in the beans and corn.
  4. Once the beans have sauteed, serve hot with rice, top with butter if you like, and enjoy :)
  • 1/2 Cup Basmati rice
  • 2 T Corn
  • 3/4 Cup Canned black beans
  • 300 mL Diced tomatoes
  • 1/2 Onion
