Souvlaki Chicken Skewers with Lemon Rice

Hey everyone! These souvlaki chicken skewers with lemon rice are sure to be a fantastic dinner in your house tonight!

I haven't shared a Greek recipe in the longest time and I'm so excited to share these awesome skewers! These skewers are inspired by one of my favourite food court meals, which is at Jimmy the Greek. Those skewers are so epic! Something I love to do with my grill pan is make a variety of skewers. To start, I thought I'd share these Greek-inspired souvlaki chicken skewers. The marinade for the chicken is so flavourful and so simple to prepare! Get out your grill pan, or even better, an outdoor grill and cook them to perfection! The lemon rice is an amazing side that complements the skewers perfectly. Of course, don't forget a generous dollop of homemade tzatziki sauce, which I've shared a recipe for here too! Enjoy!

  • 8 OZ Chicken Breast, cut into 1 inch cubes
  • 1/2 Lemon, juiced
  • 2 Garlic Cloves, minced
  • 1/2 t Oregano
  • 1/2 t Chilli Flakes
  • Sea salt to taste
  • 1 t black pepper
  • 1/2 T Olive Oil
  • 1/2 t Italian Seasoning
  • Few Drops of Vinegar

Serves 2

For the chicken

For the lemon rice

  • 2 tsp olive oil
  • 1 cup basmati rice
  • Juice of 1 lemon

For the Tzatziki Sauce

  • 1/4 cup Greek yogurt
  • 1/2 English cucumber, grated
  • 2 cloves minced garlic
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • Optional: fresh dill

Instructions

  1. Prepare the marinade by whisking together olive oil, lemon juice, garlic, chilli flakes, oregano, salt and pepper.
  2. Add chicken to marinade and mix well to coat marinade evenly, cover and refrigerate for at least 30 minutes.
  3. In the meanwhile, finely grate the cucumber and squeeze most of the water out over a bowl or sink.
  4. Mix in with yogurt, lemon juice, garlic, salt and dill sprigs. Cover and chill until serving.
  5. To make the lemon rice, rinse 1 cup rice with cold water until water runs clear. In a saucepan add rice, 1.5 cups of cold water and juice of 1 lemon. Bring to a boil and then lower heat to low, cover and simmer until rice is cooked and fluffy.
  6. Thread the marinated chicken cubes onto wooden skewers while alternating with lemon wedges (if desired).
  7. Preheat a grill on medium heat, brush with olive oil and add the skewers on the hot grill. Make sure the skewers start to sizzle as soon as they hit the grill (You will not get a good char if your pan is not hot enough).
  8. Cook for about 5 minutes and then flip and cook other side until it has a beautiful char or until chicken is cooked. (keep flipping if required to ensure skewers don’t burn.
  9. Serve immediately with a hot spoonful of rice, souvlaki skewers and a dollop of tzatziki.
