Quick Healthy Crispy Chicken Sandwich

Hey everyone! This quick and healthy crispy chicken sandwich is the perfect way to satisfy your cravings for fried chicken by skipping the fast food chains and taking it on at home! Not only will you save all the calories, but it should be tons of fun preparing this sandwich and it will taste fresh and amazing! We won't sacrifice any flavours or the crunch of the crispy chicken sandwiches we all know and love. The chicken is in a simple marinade and is then oven-baked to perfection for that perfect crispiness! Top it off with your favourite burger toppings and some sweet potato fries, which I'll also show how to make, and you've got an excellent lunch! Get ready to experience that fast food goodness in a healthy way and be sure to enjoy with some sweet potato fries to complete this delicious and easy meal!

  1. Preheat oven to 425 F.
  2. Cut the sweet potato into wedges and season with olive oil, salt and pepper, and cayenne pepper. Mix well and transfer onto a foil-lined baking sheet and cook in the oven in the bottom rack for 25-30 minutes or until cooked and brown, making sure to turn them halfway along the cooking time. In the meanwhile, prepare the marinade for the chicken.
  3. Butterfly the chicken to get two equal pieces.
  4. Put paprika, garlic powder, onion powder, salt and pepper in the cream. Stir well and submerge the chicken in this mixture. Let it marinate for at least 15 minutes.
  5. Lay out the breadcrumbs on a plate and lift up the chicken from the marinade and let excess marinade drip off. Put the chicken on the plate with the breadcrumbs and coat evenly on both sides with the breadcrumbs.
  6. Transfer onto a baking sheet with a wire rack. Cook in the oven for 15 minutes or until cooked.
  7. In the last minute of the chicken's cooking time, add in a slice of cheese on the chicken if you would like some cheese in your burger.
  8. Toast your burger buns if you choose to. Assemble your burger by lying your sauce on either side of the bread, lettuce, chicken and other toppings as you please. Serve with hot and delicious fries and enjoy :)
