Pumpkin Spiced Cinnamon Roll Pancakes with Cream Cheese Glaze

Hey everyone! These pumpkin spiced cinnamon roll pancakes sure are a heavenly breakfast!

I don't know about you, but I love walking by cinnamon rolls at the mall. That smell is just absolutely tempting, I can't get enough of it! I'm happy to say that you'll rediscover that same smell with these awesome cinnamon roll pancakes! Fluffy oatmeal pancakes with a hint of pumpkin pie spice and cinnamon are incorporated into the batter, and the pancakes are layered with a rich cream cheese glaze and a cinnamon swirl. This bakery-inspired classic is sure to make for a warm and cozy breakfast on a crisp morning. Enjoy!

  1. Preheat the oven to 200 F. In a large mixing bowl, add the oat flour, honey and baking powder. Mix well using a stand mixer or a whisk until smooth and the batter has a thick yet runny texture.
  2. Heat a pan to medium heat, add some butter and using a 1/4 measuring cup start cooking the pancakes. Flip the pancake when you see bubbles start forming, about 1-2 minutes and cook on the other side for another minute. After each pancakes is done, transfer to the oven on a baking tray to keep warm.
  3. To make the cream cheese glaze, add the cream cheese, milk and powdered sugar in a whisk well until smooth and combined. Let glaze chill in the refrigerator.
  4. To make the cinnamon swirl, mix together the brown sugar, butter and cinnamon and transfer to a plastic bag/ziploc, squeeze the mixture into a corner and seal tight. Cut 1/4 inch corner to help with making the swirls.
  5. To assemble the pancakes, layer in the following way. Start with a pancake and spread 1 tbsp of glaze, followed by a sprinkling of cinnamon and/or pumpkin spice and a cinnamon swirl. Repeat until all pancakes are layered. Serve hot and enjoy :)

  • 3 T Powdered Sugar
  • 3/4 T Milk
  • 44 g Light brown sugar
  • 1 Large Egg
  • 160 G Rolled Oats
  • 2 t Baking Powder
  • 1 T Honey
  • 1 t Vanilla Essence
  • 2 t Butter or cooking spray, for cooking
  • 1 t Cinnamon
  • 1 t Pumpkin spice

  • 2 T Butter, at room temperature
  • 1 t Cinnamon, plus more for topping
  • Pumpkin spice, for topping
