Delicious North Indian Potato Brunch Rolls

  1. Heat oil in a pan on medium heat. Add in the cumin seeds and when they start to change colour and become aromatic, add in the hing followed by ginger and onions.
  2. Once onions start to caramelize and get some colour, add in turmeric, coriander powder, cumin powder, and chilli powder. Stir and cook for 1-2 minutes. Then add in the peas and the green chillies.
  3. Add in the potatoes and lightly mash with a potato masher or with the back of a spoon and mix well to combine with the masala.
  4. Add in salt to taste and finish with some of the lemon/lime juice. Optional: Add in fresh coriander for extra flavours.
  5. Prepare the bread as described here.
  6. To make the rolls, add in 3-4 tbsp of the potato masala and roll it up and enjoy your awesome North Indian brunch! :)
