Delicious and Light Veggie Couscous Salad

Instructions

  1. Cook the couscous as per package directions.
  2. Put a pan on medium heat and sauté the onions until soft.
  3. Add in the tomatoes and cook until it has become soft.
  4. Add in salt, pepper, curry powder and take it off the heat.
  5. Stir in diced cucumbers and top with green onions. As a dressing option, stir in some Greek yogurt. Enjoy :)

Hey everyone, here is a delicious and light couscous salad with fresh veggies! This dish makes for the perfect lunch! The texture from the pearl couscous is so soft and fluffy, and the pairing of the veggies bring out simple yet fresh flavours. You can also mix in some Greek yogurt for a creamy salad! Enjoy!

  • 1/3 Cup Israeli couscous
  • 1/2 Stalk green onion, sliced
  • 1/4 Onion, chopped
  • 1/2 Beefsteak tomato, diced 

Ingredients

Serves 1

  • 1/4 cucumber, diced
  • salt and pepper to taste
  • Curry powder to taste
  • Optional: 100 G plain Greek yogurt
