Homemade Juicy Chicken Shawarma Sandwich

Hey everyone! A chicken shawarma sandwich has been my perfect on-the-go meal when I was a student. Absolutely so satisfying with juicy chicken and warm pita bread, what more could you ask for? I have to add that I would always have a side of crispy potatoes with LOTS of garlic sauce! That was the perfect combo!

After my shawarma craze I really wanted to have my own at home, however. As is the problem a lot with fast food, I just found the sandwiches would get cold quite quickly! So, with this homemade chicken shawarma recipe, I'm going all out with an absolutely scrumptious lemon marinade with a touch of chilli flakes. I bake the chicken thighs so that makes it so easy to cook! Finish it on the pan and add your favourite toppings and you've got a mighty sandwich ready to enjoy! I take it up a notch and wrapped everything up in my own homemade pita bread.

Instructions

  1. Combine all the ingredients for the chicken marinade. Marinate the chicken for at least an hour.
  2. Then, put it in the oven at 425 F and let the chicken cook through, about 35 minutes.
  3. Slice the chicken into strips. Optional: Then, cook the chicken on a grill pan or frying pan to let the chicken become crispy.
  4. Tear the pita breads along the seam into two thinner pieces, and then lay them on a counter top with one half slightly overlapping the other.
  5. Spread a tablespoon of the sauce along the centre. Add the lettuce, onions, chicken and any other toppings of your choice.
  6. Start rolling from the bottom, ensuring the wrap is tight and complete the wrap.
  7. Wrap the sandwich with two pieces of aluminum foil, making sure to seal at each end. Toss the sandwich in an oven at 425 F or grill pan for 1-2 minutes until warmed through. Enjoy hot :)

  • 8 Chicken thighs
  • 1/4 Cup Olive oil
  • 1/2 Lemon, juiced
  • Pinch of cinnamon
  • 1/4 t Turmeric
  • Red pepper flakes to taste
  • 4-5 Garlic cloves
  • 2 t Ground cumin

Makes 4 sandwiches

  • 2 t Freshly ground pepper
  • salt to taste
  • 1 1/2 Cups Lettuce, chopped
  • 1/2 Onions, sliced
  • 1/2 Cup Greek yogurt sauce
  • /garlic sauce
  • 4 Pita breads
