Delicious Indian Puff Pastries - Veg and Non-Veg Recipes

Instructions

  1. Preheat oven to 425F.
  2. First, make your potato mix as directed in the link above and let it chill for at least 30 minutes.
  3. To make the chicken mix, heat a pan on medium heat and add ghee.
  4. Add in cumin seeds, then add in onions and garlic and cook for a few minutes until onions are soft.
  5. Add the chicken mince and mix, cooking until the meat is no longer pink.  
  6. Next add in the spices along with your tomatoes and cook until tomatoes have broken down and soft.
  7. Once your mixture has become cohesive, season with salt and taste and adjust according to your taste. Finish with a final garnish of cilantro. Let the mixture cool for at least 30 minutes.
  8. Cut the puff pastry sheet into 4 equal squares. In the centre of each square, add in about 2-3 tbsp of the potato mix/chicken mix or both if you're making both the vegetarian and non-vegetarian patties. Note: Do not remove the puff pastry from the included parchment paper.
  9. To make square patties, simply wet the edges of the squares. Spread your mix, leaving about a centimetre gap at the edge and fold the square into a half to make a rectangle. Apply some pressure and seal the dough.
  10. To make triangular patties, simply wet the edges of the squares and spread the mix as directed above. Diagonally fold the dough and apply some pressure to seal.
  11. Make a quick egg wash with 1 egg and 2 tsp of water. Whisk until combined. Using a pastry brush, brush the outside of the patties.
  12. Bake in the oven for about 12-15 minutes or until the pastries are golden brown, puffy and crispy. Enjoy :)

Let’s have fun with some puff pastry and make one of the most popular and my favourite Indian street foods. Patties. These are just amazing, a nice light crispy crust filled with an equally exciting potato mix.  I'm gonna be using my favourite potato mix which I has quickly become a staple in so many recipes. This was my ultimate go to lunch at my schools cafeteria. I’m also gonna be showing you another awesome mix which will be a spicy, tangy chicken mix.
