Funfetti Birthday Cake Pancakes with Creamy Glaze

Hey everyone, here's my take on some delicious funfetti birthday cake pancakes! I had been waiting to try making these for the longest time and was so happy to finally get the chance to do it!

I had no idea what to expect, but I'll tell you this: I for sure was NOT at all disappointed! Oh man I loved every single bite, seriously, and I did not want that meal to end. I'm sure you'll enjoy this recipe, I know I sure did! I followed the same usual base for my pancake batter with the addition of sprinkles, and that alone took simple pancakes to another level. Of course it can't be complete without a sugary glaze, which I'll be sharing how to make too!

Whether it's your birthday or not, have a party with these fluffy and fun funfetti pancakes with a rich creamy glaze! Enjoy!

Instructions

  1. Preheat an oven to 200 F.
  2. Heat a pan on medium heat with some oil or butter.
  3. Pour 1/4 cup of your batter onto the pan.
  4. When bubbles start to appear and the underside has become golden brown, flip the pancake. Reduce the heat to medium-low and cook for 1-2 minutes.
  5. Transfer your pancake onto a baking sheet and keep it warm in your oven.
  6. Repeat steps 3-6 for the remainder of your batter.
  7. Mix all the ingredients of the glaze together. Pour over your pancakes and finish with some more sprinkles. Serve hot and enjoy :)

Makes 6

For the pancakes

  • 1 Cup Splenda or powdered sugar
  • 2 T Heavy cream
  • 1/2 t Vanilla
  • 1/2 Cup All purpose flour
  • 1/2 Cup Whole wheat flour
  • 1/4 t Cinnamon
  • Milk as needed
