Hey everyone! Here is a unique toast combo that I'm sure you're going to love! I honestly have no idea how but this was inspired by gorgeous fish scales - no joke! I'm not sure when I had recently saw fish with beautiful scales but it just popped into head as I was making breakfast one day and this was the result!

But don't worry, fishy is the last thing that this toast is! The cucumber is absolutely refreshing, and us savoury folks will adore the boiled eggs. The finishing touch that truly completes this exciting start to the day is a touch of chilli oil and some chilli flakes if you want that extra heat. Enjoy!

Fresh and Tangy Egg Toast


  1. Boil water in a saucepan. When it has a rolling boil, then you add the egg carefully using a spoon and cook for 7.5 minutes. Cook for longer if you like a fully-cooked yolk.
  2. Prepare an ice-water bath. Transfer the egg and let the egg cool for at least ten minutes.
  3. Toast your bread to your preference. While the toast is toasting, cut the cucumber into 7-8 thin slices.
  4. After the egg has cooled down, peel it. Using a sharp knife or an egg slicer, thinly slice the eggs lengthwise. Carefully start arranging a layer of eggs, followed by overlapping layers of cucumber until the entire slice of toast is covered. Finish with a drizzle of chilli oil and chilli flakes. Serve immediately and enjoy!

Serves 1

  • 1 Egg
  • 1/4 Cucumber
  • 1 Large slice of toast or two small slices of toast
  • Drizzle of chilli oil
  • Chilli flakes (optional)
