Double Stuff & Cookie Oreo Cookies and Cream Pancakes

Hey everyone! We all know about Oreo's double stuf cookies, so I've replicated them in these double stuff & cookie Oreo cookies and cream pancakes by doubling both the cookies and the cream cheese glaze for quadruple the fun!

I think I've become a king of cookies and cream pancakes! I've checked my old recipes and realized that this is my fourth ever cookies and cream pancake recipe. What can I say, who doesn't love cookies and cream? I've made these super indulgent by doubling the cookies and the cream so no ingredient is left behind! I've added cookie crumble in the batter and layered these pancakes with cookie crumble and the cream cheese glaze. Yet another cookies n cream pancake recipe success? I think so and I hope you do too! Enjoy for an amazingly sweet treat for breakfast this morning!

  1. Preheat the oven to 200 F. In a large mixing bowl, add the oat flour, honey and baking powder. Crush the Oreo cookies in a plastic bag, and add most of them in the batter, reserving 2 T for the topping. Mix well using a stand mixer or a whisk until smooth and the batter has a thick yet runny texture.
  2. Heat a pan to medium heat, add some butter and using a 1/4 measuring cup start cooking the pancakes. Flip the pancake when you see bubbles start forming, about 1-2 minutes and cook on the other side for another minute. After each pancakes is done, transfer to the oven on a baking tray to keep warm.
  3. To make the cream cheese glaze, add the cream cheese, milk and powdered sugar in a whisk well until smooth and combined. Let glaze chill in the refrigerator.
  4. To assemble the pancakes, layer in the following way. Start with a pancake and spread 1 tbsp of glaze, followed by a sprinkling of the reserved cookie crumble Repeat until all pancakes are layered, and sprinkle on extra crumbles for the top pancake. Serve hot and enjoy :)

For the pancakes

  • 5 OZ Cream Cheese
  • 3 T Powdered Sugar
  • 3/4 T Milk
  • 1 Large Egg
  • 160 G Rolled Oats
  • 2 t Baking Powder
  • 1 T Honey
  • 1 t Vanilla Essence
  • 2 t Butter or cooking spray, for cooking
  • 6 Classic Oreos
