Cinnamon Pancakes with Cookies and Cream Glaze

Hey everyone! These cinnamon pancakes with a cookies and cream glaze are such a delicious option for your Pancake Sunday breakfast! I love the combination of the simple pancakes with this creamy and sweet glaze, and I'm sure you're really going to love this take on cookies and cream pancakes!

This recipe will show you how I make simple chocolate chip pancakes and pair them with a delicious cookies and cream glaze on top! While it seems simple it was so amazing and fluffy and ultimately delicious! While I used cookies and cream protein powder for the glaze feel free to use real Oreo crumbles as that would definitely make it cookies and creamy, and even put them in the batter!

This is one of my many cookies and cream pancakes and it is seriously amazing! As you may be able to tell by now, I really enjoy cookies and cream! Let me know what you think of this cookies and cream glaze, and if you've got leftovers, I recommend you add it to some overnight oats as I do in these M&M Cookies and Cream Overnight Oats! Makes 6

For the pancakes

  • 1/2 Cup Whole wheat flour
  • 1/2 Cup All purpose flour
  • 1 t Baking soda
  • 1 t Baking powder

For the toppings

  • Chocolate chips
  • Cool Whip
  • Cinnamon
  • 1 Egg
  • 1 Cup Milk or enough to make a thick batter
  • 1/2 t Vanilla extract
  • 1/4 t Cinnamon


  1. For the glaze, put the protein powder in a medium sized bowl and start adding milk and stirring until you get a thick but pourable consistency.
  2. Start mixing in cream cheese and add more milk if necessary to maintain the desired consistency.
  3. Set aside for later.
  4. For the pancakes, preheat an oven to 200 F.
  5. Heat a pan on medium heat with some oil or butter.
  6. Pour 1/4 cup of your batter onto the pan.
  7. Sprinkle the chocolate chips on your pancake.
  8. When bubbles start to appear and the underside has become golden brown, flip the pancake. Reduce the heat to medium-low and cook for 1-2 minutes.
  9. Transfer your pancake onto a baking sheet and keep it warm in your oven.
  10. Repeat steps 6-9 for the remainder of your batter.Lay out your pancakes on a plate and pour your glaze over the top and sprinkle some cinnamon and Cool Whip. Serve hot and enjoy :)
