Extremely Fun & Fluffy M&M Funfetti Pancakes

Hey everyone! I wrote another birthday cake pancake recipe a long time back, and here I'm sharing with you a really exciting one! There's no such thing as too much celebration right?

These birthday cake pancakes are the ultimate fun stack! There's extra colour and a hint of chocolate from the M&Ms, and the stack is topped with some bright berries for the extra pop of colour. This goes amazingly well with a rich cream cheese glaze. No matter the occasion - whether it's your birthday or not - these ultimately fun funfetti pancakes are the life of the party. Enjoy!

Instructions

  1. Preheat the oven to 200 F. In a large mixing bowl, add the oat flour, egg, honey, baking powder,  M&Ms, sprinkles and vanilla extract. Either begin whisking with your hands or turn on your stand mixer, and gradually pour in water until you get a thick but runny pancake batter.
  2. Heat a pan to medium heat. Add a bit of butter and scoop out about 1/4 cup of pancake batter onto the pan. Cook for about a minute or two, until the pancakes start forming bubbles, then flip on the other side. One both sides are cooked, transfer the pancake onto a baking sheet and leave it warm in the oven. Repeat this step for the remaining batter.
  3. To make the cream cheese glaze, add the cream cheese, milk and sugar in a mixing bowl and whisk vigorously until until the ingredients have combined well.
  4. When all the pancakes have cooked, place one pancake and spoon on a bit of glaze. Stack on another pancake and repeat until you've coated the top pancake. Top with additional sprinkles and the berries. Serve hot and enjoy :)

For the pancakes

  • 5 OZ Cream Cheese
  • 3 T Powdered Sugar
  • 3/4 T Milk
  • 1 Large Egg
  • 160 G Rolled Oats
  • 2 t Baking Powder
  • 1 T Honey
  • 1 t Vanilla Essence
  • 2 t Butter or cooking spray, for cooking
  • 3-4 T M&Ms
  • 2 t Sprinkles 

For the toppings

  • 1/2 Cup Berries of choice
  • Extra sprinkles
