Banana Bread Chocolate Chip Pancakes with Hazelnut Spread

Hey everyone! These banana bread chocolate chip pancakes with hazelnut spread are one awesome way to treat yourself this morning!

Everyone loves that smell when a soft loaf of chocolate chip banana bread comes out of the oven. I know I do! My aunt makes one heck of a chocolate chip banana bread and I always bring some home with me after I visit her! Since I adore a fluffy chocolate chip banana bread so much, I thought I'd recreate it in these pancakes. I have to say are these pancakes one delicious treat! The mashed bananas add so much sweetness and make these pancakes extremely fluffy and soft, just like banana bread! What goes so well with bananas? A rich chocolate hazelnut spread! These pancakes are topped with a generous serving of hazelnut spread, and finished with maple syrup and extra chocolate chips for a complete pancake stack.   1. Preheat the oven to 200 F. In a large mixing bowl, add the oat flour, egg, honey, baking powder,  chocolate chips, mashed bananas and vanilla extract. Either begin whisking with your hands or turn on your stand mixer, and gradually pour in water until you get a thick but runny pancake batter.
  2. Heat a pan to medium heat. Add a bit of butter and scoop out about 1/4 cup of pancake batter onto the pan. Cook for about a minute or two, until the pancakes start forming bubbles, then flip on the other side. One both sides are cooked, transfer the pancake onto a baking sheet and leave it warm in the oven. Repeat this step for the remaining batter.
  3. When all the pancakes have cooked, stack the pancakes one on top of the other. Add the sliced bananas on the top pancake. Spoon on the chocolate hazelnut spread and pour maple syrup. Finish with extra chocolate chips.  Serve hot and enjoy :)

For the pancakes

  • 1 Small banana, sliced
  • 2 T Hazelnut spread
  • 2 T Maple syrup
  • 1 T Chocolate chips
  • 1 Large Egg
  • 160 G Rolled Oats
  • 2 t Baking Powder
  • 1 T Honey
  • 1 t Vanilla Essence
  • 1 1/2 Small bananas, mashed
  • 2 t Butter, for cooking
