Healthy Egg Soufflé For One with Onions, Green Peppers and Cilantro

Hey everyone! I've been posting these healthy breakfast egg soufflés for quite awhile on Instagram because they are such a breakfast game changer! I absolutely love these for an easy and savoury start to the day! There are so many variations to this recipe so feel free to customize it with your favourite toppings. To show a basic recipe, this is one of my favourite combinations with onion, green pepper and cilantro. Super simple and super quick which is what most of us are looking for when we have a busy start to the day!

The key with this recipe is that it's individual-sized! Those who love to meal prep tend to bake these muffins in a muffin tin, but for guys who live solo like me and who enjoy eating a different breakfast every day that would be such a waste! So what we're going to do here is make this little guy in a ramekin. Just dump everything in and pop it in the oven! Also, the mixture will puff up like a soufflé, so I'd say it's more like a soufflé than an egg muffin. Enjoy!



Ingredients
  • 1/2 cup eggs or egg white 
  • 1 tbsp chopped green pepper 
  • 1 tbsp chopped onion
  • 1 tbsp chopped cilantro
  • Salt and pepper to taste
  • Spray oil
Instructions

  1. Preheat the oven at 400 F.
  2. Spray the ramekin with spray oil. Add all the ingredients and mix well. 
  3. Bake for 15-20 minutes. Garnish with additional cilantro if desired. Serve hot and enjoy!
