Ingredients

For the dough:
  • 12 oz 00 flour
  • 1 1/2 packets instant dry yeast
  • 3 tsp butter
  • 1 tsp salt
  • 1 tsp oil
  • Lukewarm water as needed (90-110F)
Toppings for the white pizza:
  • 45 g mozzarella cheese
  • Basil for garnish
Toppings for the cheese pizza:
  • 45 g mozzarella cheese
  • 2 tbsp pizza sauce of choice (or make your own with 2 tbsp passata, red chilli flakes, salt, olive oil, and 1/2 clove of garlic)
  • Basil for garnish
Toppings for the pepperoni pizza:
  • 45 g mozzarella cheese
  • 2 tbsp pizza sauce of choice (or make your own with 2 tbsp passata, red chilli flakes, salt, olive oil, and 1/2 clove of garlic)
  • 14 g/8-9 slices pepperoni
Equipment needed
  • 6 inch cast iron pan
  • If you don't have a 6 inch pan, and are using a pan that's 10 inches or more, then use 2/3 of the recipe for one pizza
  • Bent scraper or kitchen knife
Instructions
  1. Measure the yeast in a small bowl and add about 6 tbsp of likewarm water. Whisk vigourously until foamy and let rest for at least 5 minutes.
  2. In a large bowl, add the flour. In another bowl, add water to the yeast and add in the flour. Using your hands or a stand mixer, begin kneading the dough. Do not discard the remaining yeast - fill the bowl with water, give it a mix, and add it back to the dough. Knead for a minute and add the butter, kneading for another 1-2 minutes. Keep adding water until the dough comes together. We want the dough to be soft and supple without being sticky.
  3. Stop kneading and add salt. Knead for another minute.
  4. After the dough has reached a smooth consistency, transfer to a bowl and cover with a damp paper towel or cloth. Let the dough rest for 2 hours.
  5.  After the dough has risen, knead the dough with your hands for a minute. Divide the dough into three equal parts by either using a bench scraper, a knife, or your hands.
  6. Working on one portion at a time, start working on the dough by folding it inside out while rotating 90 degrees and sealing the back to make the dough taut while sealing any air. Keep working until the dough is smooth and resembles a mozzarella ball.
  7. Brush the cast iron pans with olive oil. Add a dough ball and seal with two layers of plastic wrap. Let it rest for 1 1/2 to 2 hours, or until the dough has doubled in size.
  8. 1 hour before baking, preheat the oven at 500F
  9. After the dough has risen, remove the plastic wrap. Pat the dough stretch it until the dough covers the diameter of the pan. Let the dough rest for a few more minutes.
  10. After the dough has rested, begin assembling your pizza of choice by adding the toppings.
  11. Turn the heat down to 450F and bake until the crust is golden brown and the cheese is caramelized. (In case the crust is cooked and the cheese did not caramelize, broil the pizza until the cheese is to you liking.
  12. Once the pizzas have finished baking, garnish the white and cheese pizzas with fresh basil. Serve hot and enjoy!
