Lean and Green Spinach White Chocolate Chip Oatmeal Pancake Recipe

Hey everyone! These lean and green spinach pancakes are super fun and so healthy! Of course, this perfect stack is complete with the addition of white chocolate chips!

Adding spinach makes these pancakes extremely green on its own, but adding some green food colouring will increase the pigmentation that much more. I noticed that the spinach also added a bit of sponginess to the pancakes, making them even fluffier! Enjoy these extremely nutritious spinach and oat pancakes, sweetened with white chocolate chips and maple syrup!

Makes: 6-8 pancakes

  • 50 g baby spinach
  • 160 g rolled oats, blended into oat flour 
  • 1 egg
  • 1 tbsp honey
  • 2 tsp butter
  • 4 tbsp white chocolate chips 
  • 2 tsp baking powder
  • 1/2 tsp green food colouring (optional) 
  • 1 small apple, cubed 
  • Maple syrup as desired
  1. Preheat the oven to 200 F and puree the spinach with water. Add the pureed spinach, oats, egg, honey, baking powder, food colouring, and half the chocolate chips in a mixing bowl. Either begin whisking with your hands or turn on your stand mixer, and gradually pour in water until you get a thick but runny pancake batter. 
  2. Heat a pan to medium heat. Add a bit of butter and scoop out about 1/4 cup of pancake batter onto the pan. Cook for about a minute or two, until the pancakes start forming bubbles, then flip on the other side. One both sides are cooked, transfer the pancake onto a baking sheet and leave it warm in the oven. Repeat this step for the remaining batter.
  3. When all the pancakes have cooked, stack them on top of each other onto a plate. Top with apple slices, maple syrup, and the remainder of your chocolate chips. Serve hot and enjoy :)
