Easy Cheesy Skillet Taco Pasta Recipe

Hey everyone! This cheesy skillet taco pasta is so simple to prepare and tastes absolutely phenomenal, the perfect recipe for beginners! All you need are a couple of basic ingredients and a skillet, and this lovely dinner is ready in no time! It's so cheesy, gooey, and meaty.

Ingredients

  • 8 oz penne 
  • 1 14-oz can diced tomatoes
  • 1 small onion, diced 
  • 2 cloves of garlic, diced
  • 2 tsp olive oil 
  • 6-8 oz minced chicken (or meat of choice)
  • 1 cup cheddar cheese 
  • 1 tsp taco seasoning
  • Salt to taste 
  • Fresh parsley 
If making your own quick taco seasoning: 
  • 1/2 tsp chilli powder
  • 1/2 tsp cayenne
  • 1/2 tsp pepper 
  • 1/2 tsp ground cumin 

Instructions

  1. Bring a pot of water up to a boil, and cook the pasta as per package directions, until it is al dente. 
  2. Heat a pan on medium heat and add the olive oil. Add the garlic and onions and cook until the onions become slightly brown.
  3. Add the meat and with a wooden spoon, break down the meat into smaller pieces. Cook until the meat is no longer pink. 
  4. Add the taco seasoning and half a cup of water. Stir well to get the caramelized bits off the pan, and cook for a few minutes to get out the rawness of the spice. 
  5. Pour in the tomatoes and season with salt. Let the mixture cook until you start seeing oil releasing from the pan. Then, bring the mixture up to a simmer.
  6. After the mixture has started to simmer, add in the drained pasta into the pot, mixing well. If you desire a thinner sauce, add some pasta water or tap water and bring the mixture back up to a simmer.
  7. Once your sauce has reached the desired consistency, add in the cheese. Cover with a lid and let it cook for at least five minutes, without taking off the lid during this time. Garnish with fresh parsley, serve hot and enjoy :)
