Orecchiette with Spicy Italian Turkey Sausage

Hi everyone! This is a recipe that I truly adore, orecchiette with spicy Italian turkey sausage! It's a super quick pasta dish that has such tremendous flavours! You can use any turkey sausage you like but I love to use my homemade turkey sausage, which I have also just recently developed the recipe for. You'll love the heat from the marinara sauce, and the secret to it are the authentic Calabrian peppers, which you can learn about in the video. This can be prepared in no time and it's perfect for a fun weeknight dinner! Enjoy!

Serves: 2

  • 8-10 oz Italian turkey sausage (my homemade sausage recipe can be found here)
  • 1 14-oz can diced tomatoes
  • 8 oz orecchiette
  • 1 small onion
  • 2 tbsp Calabrian peppers roughly chopped
  • 4 cloves of garlic, minced
  • 2 tbsp table cream
  • 1 1/2 tbsp olive oil
  • 1/4 cup parmesan cheese
  • Salt to taste
  • Optional: Basil chiffonade
  1. Heat a pan on medium heat. Add the olive oil and garlic and mix. When the garlic starts to become light brown, add the onions and mix. Sweat the onions until they become soft.
  2. After about five minutes, add the sausage and break down the meat with a wooden spoon. Cook out the sausage until the meat is no longer pink.
  3. Add the diced tomatoes and allow the tomatoes to come to a simmer.
  4. Once the tomatoes are simmering, add the Calabrian peppers. Put the heat to medium-low, add salt and Italian seasoning and mix. 
  5. As the sauce is simmering, cook the orecchiette until it is al dente, as per package directions. Stir every few minutes to ensure that the pasta does not get stuck together.
  6. When the pasta has finished cooking, reserve about 1/2 cup pasta water. 
  7. Once the tomato sauce releases fat on the sides of the pan, drain the pasta and add it to the sauce. Gradually add the pasta water to thin out the sauce as desired. Finish with cream and simmer for one more minute. Garnish with parmesan cheese and fresh basil. Serve hot and enjoy :)
