Open-Faced Barbecue Chicken Grilled Cheese Sandwich

Hey everyone! This open-faced barbecue grilled cheese sandwich is the perfect quick lunch to make whenever you just need a good grilled cheese in your day.

It's been a long time since I've shared a grilled cheese recipe! I've made so many variations and have been creating many new favourites. However, I instantly fell in love with this delicious barbecue chicken grilled cheese sandwich and I think you will too! It's hot, bold and spicy and of course loaded with cheese. The combination of flavours is absolutely perfect and it's just heavenly, not to mention really simple to make for any occasion. Enjoy!

  • Two slices of bread (I found sourdough to go amazing with this!)
  • 1 chicken breast
  • Salt and pepper to taste
  • 1/2 cup marble or cheddar cheese
  • 1 tbsp butter
  • 3 tbsp barbecue sauce
  • Parsley for garnish
  1. Heat a pan on medium heat. Spread the butter and sprinkle the cheese on one slice of bread. Grill it on the pan until the bottom of the bread is golden brown and the cheese has completely melted.
  2. In the meanwhile, heat another pan on medium heat and season the chicken with salt and pepper. Cook the chicken for 4-5 mins, when it has grill marks and is almost halfway cooked, turn onto other side. At this point, the cheese on the bread should be completely melted. Set aside on a plate lined with a paper towel. This will help keep that lovely crust. 
  3. Once the chicken has completely cooked, remove it from the pan and let it rest for five minutes on a cutting board. Shred it with two forks and add 2 tbsp barbecue sauce. Mix the chicken in with the sauce well and spoon onto the centre of each slice of bread. Top with remaining barbecue sauce if desired and garnish with parsley. Serve hot and enjoy :)
