Fried Indian Puri Recipe

Hey everyone! This is a great recipe for fried Indian puri breads, my ultimate go-to. They're one of my all-time favourite breads. I love the crispy texture on the outside and how big and puffy they get when you fry them!

Puris are a joy to make and eat. If you've never tried them before you definitely must! You'll absolutely adore them with your favourite sabji! Be sure to try out this recipe to pair with for your next Indian brunch!



Ingredients
  • 1 cup atta flour 
  • Water, as needed
  • Molten ghee, enough for deep frying.  
Instructions
  1. Combine water with atta flour in gradual increments along with molten ghee and knead until you get a smooth but hard dough. (A hard dough helps the puris to puff up completely)
  2. Let the dough rest for 15-20 mins. In the meanwhile, start heating the ghee until it just starts smoking. 
  3. Portion out golf ball sized pieces of dough, rolling each one between your hands to form a smooth ball, pat down gently and dip it gently in your hot ghee.
  4. With the help of a rolling pin, roll out the dough into a thin disk applying extra ghee on your counter or rolling pin as needed (to prevent the dough from sticking)
  5. Carefully slide the disk into the ghee and with the help of a slotted spoon or skimmer, splash ghee on the puri to help it puff up. (Be sure to be careful while doing this step). 
  6. Once the puri puffs up, turn it to its other side and cook for a few seconds until light golden brown. (If you like your puris crispy, fry until puris look golden brown)
  7. Strain your puris into a paper towel laden plate or bowl to absorb excess oil. Serve hot with Aloo Tamatar Subji or Chole.
