Elegant and Delectable Guacamole Toast with Poached Egg and Bacon Bits

Hey everyone, here is my favourite way to have avocado toast! I think avocado toast is great but if I can I like to kick it up a notch by making it a guacamole toast! It's spicy, creamy, and so good! Get that creaminess factor up even more with some poached eggs, as I'll be sharing with you in this recipe! For a real kicker, add some bacon bits and you've truly got a savoury breakfast. Enjoy!

Serves: 1

  • 1/2 serving of fresh guacamole
  • 1 egg
  • 1 slice of toasted bread or 1 toasted bagel
  • 1 slice of bacon
  •  Salt and pepper
  1. Fill a saucepan with water and bring to a boil. Put the egg in a cup or glass and before adding it to the water, make a whirlpool by stirring the hot water. This helps ensure that the egg white forms perfectly around the yolk. Bring the water back down to a simmer and gently ease the egg into the water. Cook for 3-4 minutes and use a slotted spoon to remove the egg from the water.
  2. In the meanwhile, pan-fry the bacon until it is nice and crisp, then chop it into small bits.
  3. Spread the guacamole onto the toast and gently top the egg on top, adjusting for seasoning as needed. Carefully cut the egg in half right before serving and sprinkle with the bacon. Serve hot and enjoy!
