Oven-Baked Light and Fresh Chicken Tikka Sandwich

Hey everyone! Here is a super delicious tandoori chicken sandwich that I had quickly prepared for an impromptu lunch. It turned out that this combination of ingredients made for a wonderful sandwich and I believe you're sure to love it! Healthy ingredients and quick to prepare, this is a sandwich you'll fall in love with! Enjoy!

  • 2 slices of bread 
  • 8-10 cucumber slices
  • 3 tomato slices  
  • 100 g chicken breast, diced
  • Small handful of spinach 
  • 1 tbsp tandoori masala
  • 1-2 slices of onion
  • Salt and pepper to taste
  • 1-2 tsp veggie oil

1.       Preheat the oven to 425 F. Rub the chicken with tandoori masala, vegetable oil, and salt. Let the chicken marinate for at least 15 minutes. Then, line a baking sheet with aluminum foil and let the chicken bake for 15-20 minutes.

2.       Once the chicken has finished baking, assemble your sandwich. Add the Greek yogurt on one slice of bread followed by the onion, tomato, cucumber and spinach. Season with salt and pepper. Finally add the chicken. Serve hot and enjoy!
