Savoury Beef and Vegetable Couscous Bowl

Hey everyone! Looking for a savoury yet easy to prepare lunch? Then this is the perfect recipe for you! Here is a couscous bowl that is loaded with crispy and tender beef stir fry strips topped with sun-dried tomatoes, mushrooms, red pepper, and spicy Monterey jack cheese. It only takes about 25 minutes to prepare and will definitely leave you satisfied! Enjoy!


Serves: 1 

Ingredients
  • 1 oz Monterey jack cheese
  • 4 oz beef stir fry strips
  • 4 oz cremini mushrooms 
  • 45 g Israeli couscous
  • 15 g all-purpose flour
  • 50 g red or orange peppers 
  • 4 pieces sun-dried tomatoes
  • 1 tbsp olive oil, divided 
  • Salt and pepper to taste 
  • Chilli flakes to taste 
  • Chopped parsley for garnish 
Instructions
  1. Pour the couscous into a pot and add water, bringing it to a boil. Then, let it simmer until the couscous has cooked. Drain any excess water and return the couscous to the pot. In the meanwhile, chop the sun-dried tomatoes. Once the couscous has finished cooking, add the sun-dried tomatoes and a drizzle of olive oil, mixing this well with the couscous. 
  2. Add the flour into a large bowl with salt, pepper and chilli flakes. Coat the beef strips in it on both sides. Heat a pan on medium-high heat. Add the remaining oil and cook the beef strips until they are crispy on each side. 
  3. In the same pan as the beef, add in the mushrooms and pepper and cook until they are soft, and season with salt and pepper. 
  4. While the vegetables are cooking, chop the Monterey jack cheese into small cubes. 
  5. To serve, first scoop the sun-dried tomato and couscous mixture into a bowl, followed by the beef and vegetable mixture. Top with fresh parsley to garnish. Serve hot and enjoy :)
