Oven-Baked Quesadillas with Fresh and Spicy Guacamole

Hey everyone, today I'm sharing with you these oven-baked quesadillas with fresh and spicy guacamole. This is definitely my favourite quesadilla recipe! It's freaking fantastic!

It's a delicious ground beef mixture and homemade guacamole, and the quesadillas are oven-baked to a crisp perfection. Of course it's super cheesy too, yum yum! If you want to make super warm and crisp quesadillas with the best homemade guacamole you've ever had, then this recipe is definitely for you! Enjoy :)

Serves: 2-3

  • 3 tortillas
  • Salt and pepper 
  • Taco seasoning 
  • 1 tbsp olive oil 
  • 2 oz canned chopped green chiles 
  • 1 cup mozzarella cheese or cheese of choice
  • 8-10 oz ground beef
  • Fresh guacamole, where you can find the recipe here
  • Sour cream, salsa to serve 
  1. Preheat the oven to 400 F. 
  2. Heat a pan on medium heat. Add oil, and once the oil is hot, add in the ground beef. Using a spatula or wooden spoon, break the large chunks of meat until the meat is completely brown. Add in salt, pepper, and taco seasoning. Combine the spices and add the chopped green chiles in the pan. Mix well and turn off the heat. 
  3. Next, assemble the quesadilla. On a tortilla, add a third of the guacamole, the meat mixture, and the cheese. Fold the quesadilla in half, and press lightly to ensure the ingredients are well-melded together. Repeat with the remaining quesadillas.
  4. Bake the quesadillas in the oven for 8-10 minutes, flipping them halfway through the cooking time.
  5. Once the quesadillas have finished baking, transfer them onto a cutting board and cut them in half. Serve with salsa and sour cream and enjoy :)
