Indian Street Food | Spicy Egg Roll

Hey everyone! This is one of my favourite street food recipes. It's a simple egg roll made with eggs and a paratha bread, topped with hot sauce, chutney, onions and tomatoes. The street vendors have a very neat way of making this roll, and in this video I'll be showing you the technique to make the best egg rolls! It's actually quite simple and you're sure to love this for a breakfast, lunch or even a snack!

Serves 1

  • 2 eggs
  • 1 tsp ghee + more if desired
  • 1 tbsp thinly sliced onion
  • 1 paratha bread, or tortilla
  • 1 tbsp tomato
  • 1 tbsp hot jalapeƱo tapenade, or hot sauce of choice
  • 1 tbsp green chutney (you can see how I make mine here)
  • Salt and pepper to taste 
  1. Whisk two eggs and season with salt and pepper and whisk to combine.
  2. Heat a pan on medium heat. Add half the ghee and heat the paratha on both sides. Once the paratha is golden brown on both sides, remove it from the pan. 
  3. Return the pan back to the heat, add the rest of the ghee and pour in the eggs. When the eggs begin to cook, place the paratha directly on top of the eggs. 
  4. Press upon the paratha using a spatula, press down on the paratha to ensure eggs are cooked and get some colour.
  5. Once eggs are cooked, flip the paratha and continue cooking for 30 seconds. Set aside on a cutting board.
  6. Add the chutney, hot sauce, and vegetable toppings, then wrap the egg roll. Serve hot and enjoy!
