Quick Indian Egg-Fried Rice with Green Chillies

Hey everyone! Here is a delicious fried rice dish that I absolutely love! It is so simple to make and makes for a fantastic breakfast or brunch. This recipe works really well to finish leftover rice from the night before. Of course, this recipe has a hint of heat thanks to the green chillies. Be sure to try it out and enjoy!

Serves: 1

  • 1/2 cup basmati rice
  • 1 onion
  • 1-2 green chillies (or to taste)
  • 1 tsp cumin seeds
  • 1 tbsp olive oil 
  • 3 eggs 
  • Salt and pepper to taste 
  1. Heat a pan on medium heat. Add the oil and cumin seeds. Cook the cumin seeds until they reach a reddish brown colour. In the meanwhile, cook your rice. 
  2. Next, add the onion and the green chillies with a pinch of salt. Cook until the onions become translucent. 
  3. Add in cooked rice and sautee until all the ingredients are coated with oil. 
  4. Make in a hole in the rice mixture and break in the eggs, and start mixing gently until the eggs start to scramble.
  5. Mix the entire dish well to evenly spread out the ingredients. Season with salt and pepper, serve hot and enjoy :)
