Hot Tex Mex Chicken Noodle Soup

Hey everyone! Looking for a quick lunch recipe that is full of healthy vegetables, juicy chicken, and has a fun twist? Then you'll want to try this zoo animals chicken soup! I wanted to feel like a kid and purchased these zoo animals pasta shapes, though I wasn't sure how to incorporate them in meals. This recipe was inspired by a delicious cajun chicken soup I had with black beans and corn, adding the pasta and some other veggies to have my own spin on it. Hope you'll give it a try and enjoy!

Serves: 2

  • 1 tbsp olive oil
  • 1/2 small onion, diced 
  • 2 cloves of garlic
  • 6 oz chicken breast
  • 4-5 oz zoo animals pasta or any small pasta shape
  • 4 tbsp corn 
  • 3 cups chicken broth 
  • 4 tbsp peas 
  • 2 tbsp tomato paste 
  • 4 tbsp baby carrots, diced  
  • 1 tbsp + extra Tex Mex seasoning (or you can replace Tex Mex with cajun seasoning for another awesome dish!) 
  • Salt and pepper to taste
  1. Pat the chicken dry and season it on both sides with Tex Mex or cajun seasoning. 
  2. Heat a pan on medium-high heat and add olive oil. Once the pan is hot, sear the chicken on each side until it is golden brown. Take the chicken out and set it aside on a plate.
  3. In the same pan, add the onions and garlic, and sautee until soft. Add the tomato paste and cook for 1-2 minutes. 
  4. Then add in the corn, peas, carrots, stirring for 2-3 minutes. 
  5. Add the chicken broth and add extra Tex Mex or cajun seasoning as needed. Bring to a boil. Return the chicken to the pan and add in the pasta. Cover the pan and simmer until the pasta is cooked. Adjust seasoning with salt and pepper. Serve hot and enjoy :)
