Mediterranean Style Pasta with Summer Veggies

Hey everyone! Here is one of my favourite pasta dishes to cook for a quick yet elegant lunch! It could also be a great dinner idea. I love the sweetness from the cherry tomatoes and the flavours from the roasted veggies. Speedy and healthy, this is truly a pasta lover's meal to make! Of course top it off with Parmesan cheese to your liking :) Enjoy!

Serves 2

  • 6 oz farfalle pasta (rotini also works really well) 
  • 2 tbsp olive oil 
  • 2 cloves garlic
  • Pinch of red chilli flakes
  • 1 zucchini
  • 255 g (one pint) cherry tomatoes, sliced in half
  • 1/2 a small red onion 
  • 1/2 cup parmesan cheese 
  • Salt and pepper to taste

  1. Cook the pasta as per package directions. While the pasta is getting ready continue with the remaining steps
  2. Heat a pan on medium-high heat. Add the onion and zucchini, season with salt and pepper and sautee until it has a nice colour on either side. Reduce heat to medium and add garlic and a hint of red chilli flakes and sautee until fragrant.
  3. Add cherry tomatoes and add oregano. Cook until tomatoes start to break down
  4. Drain the pasta and add it to the pan with the vegetables.
  5. Sprinkle with parmesan cheese and serve hot. Enjoy :)
