Quick Chicken Shawarma Lunch Wrap

Hey everyone, here is a delicious shawarma chicken lunch wrap! It's quite similar to a regular shawarma chicken with the marinade and flavours, and you can cook the chicken using your favourite method! I personally love to grill the chicken on skewers and it helps in easy assembly. Be sure to try out this recipe and enjoy!


Serves: 2 

Ingredients
  • 180 g of bread flour 
  • Half a small yellow onion, largely diced 
  • 6-8 oz chicken breast, chopped into cubes 
  • 2 tbsp olive oil, divided
  • 2 cloves of garlic, minced 
  • 2 tbsp plain Greek yogurt
  • Handful of baby spinach
  • 50 g cherry tomatoes 
  • 4 tsp lemon juice
  • Pinch of cinnamon
  • Salt and pepper to taste
  • Red chilli flakes, to taste
  • 1/2 tsp ground cumin 
Instructions
  1. For the marinade, add garlic, lemon juice, olive oil, salt, pepper, cinnamon, red chilli flakes and onions. Let marinate for at least half an hour (the longer the better). 
  2. To make the wraps, combine flour with water until the dough is soft but not sticky. Separate the dough into two equal-sized portions. 
  3. Using some olive oil on your work surface, roll the dough out into a thin disc, about 8-9 inches using a rolling pin. 
  4. Heat a pan on medium heat an start cooking. Once you start seeing bubbles, flip the bread, brush some olive oil around the sides of the pan and on top of the bread. Once the underside is slightly golden brown, flip the bread and cook the other side until it is also golden brown. 
  5. Cook the chicken using your favourite method, such as on a grill, broiled in the oven, or pan-fried. I choose to grill the chicken since I really love the smokiness! 
  6. Once your chicken is cooked, assemble the wrap by adding the cooked chicken, tomatoes, spinach and yogurt. Serve hot and enjoy!
